There is a whole racist/nationalist discourse which sought to demolish Liszt figure and to impose that counterfeit cannon Wagner/Schoenberg. It is difficult but little by little history is being corrected.
I really like the way they do it in R. Strauss' Im Abendrot. On the lyric "zwei lerchen nur nog steigen" there's a really cute and beautiful motif in the flutes that simulates the birds. This motif comes back again at the end after the singer "dies" in the story, the narrator may be gone from the world, but the world, the sunset and the birds, they keep going on.
One of my favorite instances of flight is in Scriabin's Sonata No. 4. The 1st movement definitely exemplifies the fluttering of wings and the second movement develops this further into a rigorous upwards flight.
another piece from messiaen that portrays birds is le merle noir, i really love how dark/sharp that one sounds, quite a contrast with other representations of birds in music
another one to suggest: Gottschalk's La Gallina (The Hen), which mixes the sudden, pecky motions of the bird with the jumpy dance style that he often writes in :)
I think it’s supposed to represent the little cupids in the painting it’s supposedly based on (“The Embarkation for Cythera” by Jean-Antoine Watteau). Still very bird-like though.

Cool video, I just find it weird to include rameau played on the piano even though he didn't write for that instrument (and the music sounds so different on the harpsichord...)

People need to give Liszt more credit. The first piece is a great example of him looking into the impressionist era, all the way back in the 1860's

I know exactly what you are talking about. When I first listened to that piece I when I first heard the flute trills. Strauss really was a genius.
Also Yoshimatsu often builds in great bird imitations into his music, I recommand his piano Concerto Memo Flora.

My clarinet teacher (who also plays flute) said that when she plays that picece outside, the blackbirds respond to her

It's for piano four hands, but Ravel also imitates bird calls in the 2nd movement of Ma mère loye (Petit poucet). Also nice video !
