- Today I am recreating another version of Tamale Pie but EASY! Some of you have asked for a recipe utilizing Jiffy cornbread mix. This cornbread casserole is cheesy, moist, and savory. This is not a pie or tamales, but it is a tasty cornbread casserole bake. This is gonna be good!

INGREDIENTS
2 boxes of Jiffy Cornbread mix
2 large eggs
1/2 cup sour cream
1/2 cup green chiles (optional)
1/2 to 2/3 cup whole milk
1 lb lean ground turkey or beef
1 oz envelope of taco seasoning
1/2 tsp smoked paprika
1/2 tsp granulated garlic powder
1/2 tsp granulated onion powder
8 oz Colby Jack cheese (shredded)
9x13 baking dish
2 Tbsp softened butter for baking dish
• bake uncovered at 375°F for 35 minutes or until cooked

When my kids were young I made a dish similar to this. The only difference is, I used leftover chili. Now they're grown and gone. I think I'll make this for me and my husband.
I am 79 and my mother made this almost exact dish, but added a can of kidney beans. She called it hamburger corn pone pie. A warm memory.
Beans! Yes, black, or Pinto, any type adds starch and texture, and flavor is all about texture!
My thought as well when she said creamed corn i said where's the beans 😆

Do you layer the beans in on top of the meat? or do you mix them in the corn "pone"? Sounds good and adds nutrition.

I grew up with it called Mexican cornbread. Had a can of corn in it and used unsweetened cornbread. Cooked in cast iron skillet. Delicious!

Definitely tamale pie - originally from Indiana with southern roots and now in the south. This is how I used to make it, almost exactly! It was one of my “I need a quick dinner” go-tos, but I haven’t had it in YEARS! Like you, I sometimes added canned creamed corn and, if I was out of Jiffy, I’d just make my own cornbread. Now you’ve got me jonesing for this and I just cooked up a pound of taco seasoned meat and tucked it in my fridge. There may be a change in my menu for the next couple of days…
That is the coolest baking dish I have ever seen. Thanks for your awesomeness. I usually put corn in the meat mixture and add all of the cornbread on top, kind of like shepherd's pie in a way. Absolutely love hearing the cheese crunch sound!!! Mama, you rock!
I make the same thing except I use red chile pork, just as a traditional tamale woudl be. Then after filling I add two boxes of Jiffy and cheddar cheese and scallion onions on top. To serve I scoop out and add hot fresh beans with bacon over it. Buen provecho!
My grandmother who was born before the turn of century used a pioneer recipe to make a tamale pie. Bottom was a meat mixture beef or pork shredded. Seasonings from scratch. And white corn flour or masa made with lard which was placed on top. No cheese, it tasted like a tamale but in casserole form. Very good. She also made prickly pear preserves. She lived in far North Texas.

I usually add a can of drained and rinsed black beans to the meat mixture. It adds fiber and a little more protein.
Got my Jiffy cookbook in 84...it has Tamale Pie...I have a small Bisquick cookbook and it's called Tamale Pie great potluck dish 💕💕💕💕💕

I watched this video and 15 minutes I made it. I did add canned corn to the meat mixture. My family loved it. We love all your recipes. We hope you make another cookbook. Your 1st one was fantastic.

It's been called tamale pie here in Arizona since at least the early 1960s. My mom made it when I was a kid, but the cornmeal mixture had more of a tamale texture rather than cornbread.
I’ve made that in the eighty cornmeal, salt and water cooking til it thicken to poured it on top of the taco meat
It's been called Tamale Pie and made pretty much the same way in Texas.
I use the recipe from my mom's early 1960s Junior League Of San Antonio cookbook.
I haven't made it in a long time so I'll have to make it soon.
Mom made this for us in the 70's and the cook book called it Tamale Joe Casserole. Very delicious ;)
Learned from my mom to make this in high school. Made for all the church potlucks. We added black olives and crushed tomatoes.
Yum!! I just made this but added some red enchilada sauce with the ground turkey and then poured a little over the ground turkey when layering and it was delicious!! Thank you!
I agree about adding enchilada sauce. That would make an even better recipe!
I been making this about 10 years ,I called it a taco pie. I will add chili power to my jiffy mix and some salsa to the meat mixture. My family loves it
The addition of the salsa is an excellent idea.
I like the idea of adding creamed corn to jiffy mixture and also thought maybe even chopped jalapenos and sprinkled cheese on jiffy layers would taste awesome, possibly even add the canned corn to meat mixture with some salsa then top with more sprinkles of cheese and repeat same jiffy layer and sprinkle with cheese. I would love to make it with ground beef and another with shredded chicken. The ideas from such a simple yet hearty recipe is the best family casserole dish you can have. You change it up to give a new take the next time you make it. Love this. I plan to make this as soon as I get the few ingredients I don't already have on hand. Thank you for this recipe!!!!

Tamale Pie. My mama was a cafeteria lady....she made the best tamale pie! Just like we had at school
I started making this several years ago but I didn’t even know there was a recipe for it 😂 I add cream style corn in my jiffy mix and I add a can of chili with my meat. It makes it so good. I also put a can of sweet corn in the meat mixture. I don’t use all the spices you use either 😊

I do this with barbecue pulled pork. Everything is basically the same besides the meat. I even put the creamed corn into the cornbread mixture. Also, when 8 serve it, i mix a little cholula into some enchilada sauce and put that and some sour cream on top. Great meal.
think I would put cheese in the middle also. looks awesome I think I'll play with this recipe a little

I make a very similar but with corn and beans added to the beef. Yummy stuff
A good recipe. I always add a red sauce- tomato, salsa, or red pepper sauce etc- to the meat. The reddish color really looks and tastes appetizing.

I've made similar to this but added cooked Mexican rice over the taco meat mixture and and didn't add another layer of cornbread batter, then topped with cheese

This is very similar to something I make. It is a chili pie. Starts with a layer of Jiffy Corn Muffin mix, one box. Cheese and pepper mixed in. Next a layer of chili, preheated so everything bakes evenly. Then sour cream, more cheese and peppers. 400 degrees for 30 minutes.

My grandmother made this when I was a child, (I'm almost 65 now), and she called it Tamale Pie. The difference was she used her own cornbread recipe and put a layer of cheese on the ground beef mixture as well as the top. Since Jiffy is so sweet does it make your whole dish sweet? Love your videos!

This is so good. I added some black beans to the meat mixture and creamed corn to the bread. I struggle with using my oven and want to see if there's a way I can do this in my instant pot without burning or undercooking it.
I’m in Orlando, FL and my aunt who raised me will make this at least once a week. It was a favorite in our household. We called it Mexican Pie.

When I was a kid! My grandmother use to make this! They actually had a box version with all the ingredients except the meat! It had BLK olives, and corn! The top was like tamales, and cheese! I think it was corn meal+ water on top. It was delicious! One of my favorite memories! I believe they made a taco pie also! Don't know why they discontinued it! They always get rid of the good stuff!!! I need to try to make it from scratch! Tamale pie yummy!!!

I just made it with creamed corn and green chiles in the cornbread. I used taco seasoning mix and added the same. (I found smoked paprika at one of our local grocery stores, finally! Upon your recommendation in your recipes.) It's baking right now. I have made the from scratch version of yours also and didn't get the spice balance right last time even though it still was great. So we're waiting with our stomachs growling as it bakes! Lol. Thanks for your recipes! By the way, I never had this recipe before you, I'm 55 from northern Illinois, so I call it tamale pie or the cornbread taco meat thing, lol. 🤣

I just popped mine in the oven. I used ground beef and a can of creamed corn, and some sliced olives over the meat before covering with the rest of the jiffy mix. Thank you for a simple recipe which I needed after getting back from vacation and being busy with laundry, etc.

I make something very similar but I use chicken instead of beef and I don’t go by the jiffy directions. Instead I mix 2 boxes of Jiffy with 2 eggs and a can of creamed corn for the cornbread. I also partially cook the cornbread before adding the other layers and putting it back in.
I think I’m gonna try the chilis in the cornbread next time, looks good.

I remember about 40 years ago. My mom would buy this box called tamale pie. She loved it and was sad it was discontinued.
I remember that. Big Star used to sell it. It was a kit. It was so good.
I remember that little box mix!! It was the bomb !! My littlest brother loved it and I always made it for him. Now I’m a Gramma and have used the wonderful Jiffy corn bread mix for many years of delicious Tamale Pie. Very similar to this, but I always spread the corn bread over the top, and yup, cast iron skillet ♥️
