Can we dry under fan
No. Inside will not dry properly and they will become hard when you fry.
Why sandige becomes red after frying
It's because of the onions. And also the oil should not be too hot. If we don't use onion, then sandige will be white only but then onions give extra taste to the sandige 😊

Sandige may not become very white because of any one of the following reasons :
Because of the vegetables we put in it.
If we don't put the sandige under direct hot sun.
If we remove the sandige from the terrace before it is completely dry inside.
If we fry the sandige in oil which is not correctly heated.
While frying the oil should be hot, but the gas fire not on the high and when we put the sandige in hot oil, we should take out just as it is fried and not allow it to turn red.
These are the possibilities I know. Hope it helps 😀
