Interesting meatball recipe. I've used the 1/2 mushroom combination with ground beef in the making of Bolognese sauce before. I can't wait to try it with meatballs.
Personally, my favorite Chef! Yes, lots of onions for a great sauce. Wonderful inclusion of flavorful healthy mushrooms. I'm Italian, I don't follow the tradition of browning the prepared meatballs. I simply find it unnecessary, unless I'm making a non sauce large meatball recipe, where the sauce on the side. I do add Worcestershire sauce to the sauce. It adds super flavor. I’ve been making my own Gravy or , Spaghetti sauce since I was a child in my Mother kitchen and her teachings me how to. I still to this Day I have my Mothers food mill to grind the tomatoes for the Gravy.
I like spaghetti and meatballs as much as the next guy. However, the moment you mentioned sweet-and-sour brisket and tongue, that was all that I could think about. Please do a video for that recipe!
Let me give you a small idea here. Crushed Ritz crackers. everything else is good and then some Robusto Italiano salad dressing. It makes the pan that you back on oily, but it gives it a certain zing.

I like that there is a high percentage of vegetables to meat. We're big meat eaters, but that is, there is such a thing as too much. Little tricks like this whole lot. I'm wondering how cooked spinach might go in the meatballs. Maybe just a little bit. Need to keep the meat. We're not vegetarian and the guys here would have a fit, but there's nothing wrong with leaning that way a little bit.

Love it, but I just don't get the whole olive oil at the end thing. Everyone is pouring oil on everything to finish their dishes. I like olive oil, but just not a fan of this

Worcestershire sauce does brighten tomato sauce, and so do soy sauce and fish sauce. Give them a try.

what brand of tomatoes are you using after all it's all about the tomatoes
This dish would also be great with a creamy polenta instead of the pasta.

Big question: remove tomato seeds before cooking sauce to avoid bitter flavors or no? Does it make any difference?
