For this soup, you dint need to blend the okazi... Jut put the strands like that, it will get soft in the soup but you need to be seeing it in the soup
Yes.. the usu acts as a binder to hold the Egusi together if not the Egusi balls won't be strong. For the thickner, achi or ofor is fine but achi is preferable because ofor thickens too much unless you use very little quantity.. Ede will give it a different taste and texture
