How to make Colombian SANCOCHO || Soup ||

  • Ingredients:
    Chicken or Beef stock (I filled my stock pot half way so this one was eyeballed)
    6 cloves of garlic minced
    1/2 onion small diced
    2 ears of corn cut into 8 pieces
    1 plantain cut into 1-2 inch chunks
    2 large yuca root cut into 2 inch chunks (or larger)
    4-5 large carrots cut into 1 inch chunks
    5 gold potatoes cut into 2 inch chunks
    5 chicken breast cut into bite size chunks
    1/4 of minced cilantro plus more for serving
    Serve with a side of white rice, cilantro, avocado and a bit of lime juice!

    I was born in Colombia, grew up in Miami, now I live in NC. I’m looking to master this recipe for when winter rolls around. LOVE AND MISS SANCOCHO SO MUCH.

      I hope you love it! My mother in law taught it to me and she’s from Colombia. My husband was born in Miami but lived in Colombia several years before going back to Miami. He took me and the kids in 2016 and my gosh! Colombia is absolutely stunning

    Wow love this.. super simple !! Im Puerto Rican & Dominican and my husband and loves my Dominican style sancocho pero he’s half Colombian and half Venezuelan and I wanted to make him a Colombian version and yours looks just fabulous!! Mmm Que ricoooooo hermana

      To me it’s like a potato, but more startchy which gives it this slight sticky bite. Fried is my favorite way to have yuca!

    Please is yuca the same as cassava? They look similar.

    The only thing I would say is that most of the Corn in North America is Sweet, so the Sancocho could be messed up if you did not use the corn that is Salty. So be careful if u dont want to have a sweetened Sancocho.

    Not hating on you but ... Being an African... the way you just peel the Yuka and remove the center out ...oh Lord I almost gouge my eyes out lol

      Yes! Prefer then to be yellow but traditionally it’s made with green. I like that the yellow ones have a sweetness to them

    No my dear ! You wasted so much yuca in the process of pilling. I don’t think you learn it from a Colombian person. 😅

      I did but didn’t have a potato peeler. It’s ok to not do things perfectly. I don’t aim for perfection, just delicious and that’s what I got.
