I don't buy bread anymore! The new perfect recipe for whole wheat bread

  • Want to bake the best bread ever? This whole wheat bread recipe gives you a crispy, flaky crust and a soft, cloud-like interior. Trust me, you won't need to buy bread again!
    Ingredients:
    • Water: 1 cup (230 ml)
    • Fresh yeast: ¾ tsp. (3 g) or dry yeast: ½ tsp. (2 g)
    • (Optional) Sugar: 1 tsp. (4 g)
    • Bread flour: 1 ½ cups (220 g)
    • Whole wheat flour: ¾ cup (100 g)
    • Salt: 1 tsp. (6 g)
    Tools I Used:
    Baking pan I used to bake this bread: amzn.to/3OZQQT3 (I used two of them, one turned upside down and used as cover)
    Alternative pan:
    amzn.to/49UyaOo - either two of these, one turned upside down and used as a cover, or one, but covered with aluminum foil for the first bake.
    amzn.to/4gnx6Fb - same as the previous pan.

    Very impressed with the results, The first time I did this inside the house always made it on my smoker, I just added a little liquid smoke to the bottom of the pan with the water. cooked it till 190 F we all enjoyed it.

    This bread turned out absolutely awesome. Even after I forgot to add the 3/4 cup of whole wheat flour. So on the last beat down I added half a cup of oats..
    I simply made one loaf and followed the baking directions.
    I make no knead bread often but I was interested to see what would happen with the extra messing around. It does strengthen the gluten and make the bread fluffier and softer. Super crispy thin crust..
    I will use this method from now on but will me making bigger loaves.

    I do wish that there was a print of the actual recipe at the very end that I could take a screenshot of..
    If I need to verify something I have to go back and search for the section that I need.
    Your recipe is in the oven now but only as a single loaf..

    Hi question after folding can you just leave at fridge overnight to proof and next day do you wait the dough till it gets room temp?Like how many hours on room temp?Thanks

      Yes, absolutely. The next day you can let it warm up a bit, say 30 minutes, and then continue with the steps (shaping the bread and the rest). If you have the time and want to make the bread extra good, I would recommend that you do a stretch&fold right after you take it out of the fridge, let it sit for 30 minutes, and then shape the bread.

    Could this prove overnight in the fridge instead of 2 hours? And dies this work with only wholemeal bread flour?

      You can prove it overnight in the fridge, absolutely. And you can use whole wheat flour only, but be aware that the bran in it is quite heavy and the dough will have a hard time rising and holding its shape. It will taste amazing, but it might be a little flatter and denser.

      I bake this bread all year round, the temperature varies from 70°F (21°C) to 78°F (26°C).

      Hi! Did it rise well? Is the crust hard? It usually happens when the bread is baked without steam (that's why I use a second inverted pan on top to create a lot of steam and allow the bread to rise nicely before the crust hardens). Or when the yeast didn't work and the dough didn't rise properly.

      I just use tap water at room temperature. Anything from room temperature to lukewarm will work.

      You can use regular yeast.
      She gives two different measurements for two different types of yeast

      It isn't only about rising, the whole process is to build a good gluten network so that we have a nice internal structure and texture.

    Don't use any US flower, all the fields are spayed with roundup.

      You do realize that Roundup is a weed and plant killer. It will kill anything that it touches...
      It would kill the wheat from the ground up.
