    i know a chef who had to do 20lbs of these in a hotel in dublin in 1970s. the head chef asked him if he'd ever forget how to do it, he obviously replyed no, and was then told to slice them all for soup! happy days!

    I'm in culinary school right now and the head chef wants us to learn this (for what reason I don't know) and this is so far the best video I've seen of it. Close-up, slow, explaining the angle of the blade.

    When you have gone around in one direction, change hands and go the other way. You end up with a really cool-looking hand grenade mushroom. Or a white pineapple or something.

    I REALLY enjoy your sense of humour! Thanks to YT I don't have to move to San Fran, look you up, meet with you somehow (if I'm lucky), befriend you (if you're lucky!) and then enjoy your company and your jokes!.. I just have to wait for your next video.. isn't the internet a wonderful thing??

    The culinary street cred bestowed upon by this technique did *not* help me get into the Hell's Angels. Very disappointing.

    SIXTEEN YEARS AND I STILL CAN'T DO IT!!!
    Lol honestly I stopped trying after culinary school because every time I tried I cut deep into it and then it just broke in half or at least a chunk came off! Now I've found an 11 year old video because I peeled a mushroom and started looking at peeling vs turning and well now I'm here and obsessed all over again!

    You got the skills, Chef John. The closest I get to fluting a mushroom is prepping shiitake for sukiyaki, and all there is is a little 'x'. lol. Looks great!

    i took a mushroom and did something like that the first try... even though it didnt come out as good as urs... mine had a little smaller gaps between each cut and they were all pretty much same width...
