Just discovered this video today, surprised this doesnt have more view - very comprehensive and tactical. Maybe more videos around the application of the theories to ground it and help people understand the subtle differences between the same types of tastes.
Hey Dan, I’m a new bartender and home espresso enthusiast and I just want to let you know that you have been such an inspiration for me at the beginning of my career! The level of care you have with every aspect of your cocktails combined with your incredibly humble and gratitude minded demeanor has been truly inspiring and motivating! Very happy to have found you near the beginning of your RUclips channel’s creation! Cheers mate 🍻🍸🥃
This is such a humbling message to receive, it really does mean a lot! I’m so happy you are finding value in the content, I really enjoy making it! Best of luck with all of your ventures, you will be great!
I made a gin sour made with a gin that have seaweed in it, i added a few drops salin solution and used a fried seaweed as a garnish. Very tasty and the fried seaweed taste like a umamibomb full of salt and flavour
I love the methodology around taste balance/aromatics/mouthfeel - I advocated a similar approach when dialling in coffee or even cooking and it works wonders. Amazing content as usual Dan, can't wait for the future videos!
Your videos are fantastic! Thank you for sharing all of these amazing tips. I’ve made all four of your acid adjusting solutions but am embarrassed to admit I don’t know to use them effectively. Is there any possibility of a follow up video please that shows examples of how you use these in popular drinks, such as Margeritas, etc.?
Thank you so much! 🙌 As they are 6% solutions, you can add them in the same proportion as the recipe, anywhere you see lemon juice in a recipe for the acidity but not flavour. Increase the amount slightly if you are replacing like juice as this is slightly more acidic than lemon / a 6% solution. You can also acid adjust different fruit juices to make things like Sour Orange Juice (great in Margarita style drinks), Malic Grapefruit Juice (tastes like grapefruit, feels like apple juice 🤯) or any other combination of acid and juice. I hope this helps!
Thank you for all the tips ! I discovered the coconut sugar thanks to you. I wanted to try it in the negroni as some of my friends find it too bitter. As I understood that it has some coffee/toffee taste I thought it would work. I put 2 cl of coconut sugar simple syrup (1v/1v). The negroni was more weat but I didn't find the taste of the coconut sugar. maybe it's not enough? How do you use it ? Thanks !
Thank you! I use 6% acid solutions which are close to the acidity of lemons, so 6g of acid to 94g water, for example :) You can then switch this in in roughly the same proportions as lemon juice if you want the acidity but not the lemon flavour. Limes are slightly more acidic, around 8% so you would add slightly less acid solution if it is in place of lime juice. I always encourage experimentation to find your own balance preferences.
Hi Dan, liked your video. Have you got a ration on which such an Acid booster would be using cirtic, malic, tartaric etc. when combining them, or do you just use the single acids ?
Thank you! If I'm being hyper detailed, I'll make them all into 6% acid solutions and play round with different blends. A nice go-to recipe is 4% citric and 2% malic which loosely mimics the acid make up of lots of citrus fruits. I always have a dropper bottle of this on hand when making drinks.
Bloody hell, watched this whole video and now I think I might have to do CiGS. I think people might like to know any recommendations you have on where to buy (and what to buy) good accessories - the dripper bottle for saline and other bits and bobs.
Thank you Dan! Great video and great content as usual! I'm learning a lot but I am getting confused somehow with your percentage of acid solutions. 6 grams of acids and 100 grams of water give you 106 grams of total acid solution. And if you have 6 grams in 106 grams total then it's only 5.66% of acid solution. Don't you need to have 6 grams in total of 100 grams (i.e. just 94 grams of water (94 + 6 = 100)) in order to have 6% solution? Sorry for too much maths. Thank you and kind regards!
Another extremely valuable video Dan, I’m convinced this is one of the most underrated channels on RUclips!
Wow. That’s a serious complement, thank you!

Much appreciated sir!
Using a peaty whiskey has always been my power move. Definitely going to try adding those different acid blends to see what they do.
Great video!
Thank you! It's such a good little modifier!

Phwoar, that sounds epic!
Awesome framework! Now please show more examples of how you apply these ideas

These are some thought provoking concepts. Thanks for sharing!

Sick video Dan! Love to see this kind of approach being preached. Preach it!
Thank you, so glad you like it!
Great video mate. Learning loads. Keep em coming
Thanks so much, Andrew, I really appreciate the support!
Amazing job in this video. One par salt for five part water in saline solution. Should i do the same for acid soulution ?

Good job my friend!! Your channel should striveeee

Amazing video! I just started reading Liquid Intelligence and this video is quite complementary :)
That is quite a complement, thank you!
Love this. Thanks.

Make that ‘firm maybe’ into a ‘F yes’! They’re all linked in the description 👍
(I was up until about 1am after both MCF nights setting these links up 😅)
@@DANFELLOWScoffeecocktails and that attention to detail is why you're the champ. Cheers Dan!!

Thanks so much! I do 6g acid and top up to 100g, so 6 + 94 is correct, although either are very close and would have great results.
@@DANFELLOWScoffeecocktails thank you for your reply and sorry for my nerdy observation. Keep on the good job!
Amazing
Thank you!
What an amazing channel! How is it possible, that you've been undiscovered to me? :D
Thank you so much, great to have you here now!
I love your content but I need to say that beatbox soundtrack is making me hard to enjoy it
Thank you, and noted!
