- James uses beautiful rainbow chard to make Saag Aloo, a classic Indian side. It's bloody tasty on its own, but also works well stuffed inside Parathas, which are buttery Indian flatbreads.
Chard is similar to spinach, but sweeter and more robust. The stalks come in a variety of colours, including red, yellow and white. A bunch of mixed rainbow chard really is a thing of beauty. Separating the leaf from the stalk is a good tip for cooking chard, as they have different cooking times and each have their own flavour and texture.

Thanks for the suggestion. Just arrived back from the allotment with some chard; will give it a go. Might have to concoct my own curry mix. Oh, and the flatbread. What goes into your flatbread dough?
