They come all come from old D&D one way or the other, of course, almost Medieval Fantasy with European aesthetics either come from D&D or Tolkien more directly. But in Japan in particular dog kobolds and pig orcs became dominant in modern JRPGs. My comment is that Dungeon Meshi is mostly Western RPG inspired including modern stuff. From Wizardry to Baldur's Gate. It doesn't borrow much from Dragon Quest and the like, which is different from most fantasy anime. Nonetheless, it is still has dog kobolds.
Uh oh, it seems like the translated English subtitles have been changed to be on track 3 instead of track 2 for these episodes. The ones on track 2 are the closed captions for the dub.
Crop rotation is in fact very necessary for farming in a world without synthetic fertilizer. As is the use of human excrement, which was called "Night Soil" at the time. It was actually an essential occupation to have someone go through your town or village and collect everyone's night soil so that it could be sold to farmers. And yes, if untreated, that IS a vector for disease, but... well they didn't know that.
Yeah the start feels very generic just added cooking to make it different. I don't think you should compare it much to Frieren. Sure with the fantasy background and so on there are parallels, but I think dungeon meshi works out to have uniqueness. Takes time to get into gears and works in a self contained way.
The part about getting the dungeon if you defeat the mad mage was said during the narration in episode 1!

I thought the same about kobolds, but somebody told me dog like kobolds apparently are older D&D editions inspired. So still western.
