170g Almonds Flour
160g Icing Sugar
45g Cocoa
144g Egg Whites (Split into 72g each)
210g Caster Sugar
70ml Cold Water
Salted Caramel Chocolate Ganache Filling:
220g Caster Sugar
212g Cream
75g Chocolate Chips
1/2 tsp Flaked Salt
15g Butter
Pink Macarons shells:
205g icing sugar
190g almonds Flour
144g egg whites
Food colour paste (optional)
190g caster sugar
60ml water
White Chocolate Ganache:
3:1 Chocolate to Cream Ratio
So 80gr white chocolate chips
27gr heavy cream
Tips:
Use a scale and a thermometer to get perfect result
sift the flour and the icing sugar
Dont over bake them
tap your baking tray to get rid of the air bubbles
make sure to mix your meringue to the right point

Do you bake them in a fan assisted oven?
No I did not use the fan.
