    Growing up in Southwest USA, when my mom would bake a pie, she would use the remnants of the dough to make tarts. She just made little discs of dough and plopped on whatever pie filling she was using, strawberry rhubarb or Apple and then gave us kids the tarts instead of a piece of pie. Thanks Rik!😎

    The Queen of hearts made jam tarts on a summers day.
    The knave of hearts clean stole the tarts away.
    The king of hearts called for the tarts.
    The knave of hearts was beat full sore and vowed to steal no more.
    All I can recall of nursery rhyme that was told when we were eating jam tarts.
    Thank you for the memory. Now must make jam tarts to go with sandwiches and afternoon tea. ☕🫖🍞🍰

    In the 60's and early 70's when my mother used to bake alot, any left over pastry she had she let me make into Jam or lemon curd tarts !

    My Mother and my Aunt made the best pie. The secret ingredient for delicious flakey crust was vinegar. I totally understand your recipe which is absolutely correct. ✅ 😊

    I sometimes add coconut to the bottom of the tart shell before I put the jam in ..helps to thicken the filling

    Think it was the 1st thing they let us help make as kids.. lemon curd for me always.. allergic to other fruit.. but, I’d choose lemon anything as always the best flavour 😊I tend to use icing sugar for most recipes.. as not a great sweet tooth n it’s jus on right side of a bit to suit everyone 😂

    Thanks Rik, reminds me if my mum she was always baking. It was cheaper than buying things. She used to make biscuits and tater pie in a big brown dish and apple pie and custard for afters. Any pastry left she used to make a fatty cake as she called it. Thanks for the memories Rik xx

    Hi Rik, I was born in Preston Lancashire but for the past 54 years have lived in Melbourne Australia, but I clearly remember jam tarts and apple pie were always made by mum. As a family of seven, there wasn’t a lot of money around but a jam tart made by mum on a weekend was a massive treat for us. Some memories make you very happy.

    My mum refused to waste the macaroni she used for blind baking -- to the point it almost caught fire ! Gave the pastry an interesting flavour !!

    This was a summer staple at my grandma's house. Little tarts with homemade strawberry jam filling. She used to keep them in freezer so they icy cold and perfect for hot summer days.

    Lemon zest in the pastry crust - brilliant! Absolutely brilliant!! I'm saving this for cooler temps. Today it's 35° C, no oven on today! But I've a couple of meringue crusts leftover and made your recent lemon curd - that we've thoroughly enjoyed with a few late raspberries. Rick, you've just planned our dessert for supper!     My mother used leftover pie crust to make snails. It was cinnamon sugar sprinkled on the dough, rolled up, and sliced. These look really good, too!

    Lovely childhood memories Rik thank you ,when we had them at Christmas my gran used to top them with a dollop of cream otherwise just as you did them and they were delicious , it’s the best way to use up scraps of left over pastry they always vanish 😂Amanda xx

    Perfect pieces of heaven Rik ☺️🙌🏼. I mainly use a fruit spread and add a smidgen of extra fruit spread (or jam if using jam) to the tarts on removal from oven, this adds a quite lovely colour and freshness to the tart. 😃

    When I learnt to make jam tarts there was no such things as “baking beans” so I was taught to prick bottom of the tarts with a fork before the jam was put in. And jam, even bought jam, was runny in those days.
    What we get today in jars is nothing like then!
    My gripe is that it goes off so quickly, something unheard of back in the day. Anyway your tarts looked really lip licking yummy!!

    Love a jam tart, in my school they would make a lattice jam try bake with custard, brilliant it was, will have to make one, a good tip with the water, tks mate

    Still make these when pastry left over not good for the waist line but boy they are great
    Could you make a banana cake ( 2 lb ) in the oven can’t seem to get the right temp x

    If more people cooked simple food from scratch their money would go a lot further in these economic difficulties. My parents were not wealthy but mum always made a nourishing meals. But then she went through the 2nd word war with rations.😊

    When I make butter tarts ...never seem to have enough filing for all my tart shells..last couple always end up being jam tarts

    You know my favourite flavour is lemon. Because it is 1 am in the morning, all I can do is make lemonade. Cane sugar dissolved in hot water, tons of freshly squeezed lemon juice (mouth watering), honey if needed and ice water. The making of tarts will be tomorrow morning.
