I'm not sure if that's all the covers they have done that are on their albums, but those are the ones I know. As for original songs by Evanescence, I'll recommend one per album: Anywhere (Origin Demo Album, No Music Video), Going Under (Fallen), Call Me When You're Sober (The Open Door), What You Want (Evanescence), Imperfection (Synthesis), End of the Dream (Synthesis Live), The Game Is Over (The Bitter Truth). Besides the first recommendation, all of these original songs have official music videos. Most, if not all, of Evanescence songs are fantastic, and none are bad in my opinion, so picking any song would be fine really. I hope you enjoy them if you decide to check them out.
If you are planning to go down the Ev rabbit hole, I'd suggest going back and checking out the 2 music videos you may have missed on their first album "Going Under" and "Everybody's fool". You really can't go wrong with any song off their first 2 albums as they are musical perfection(not to say their newer stuff isn't awesome in its own right), but Evanescence's music videos were all top notch and really helped you understand what the songs were about.

Please watch the Synthesis Live version of Lacrymosa. It's built around Lacrimosa from Mozart's requim and she performs it with an orchestra there, the whole thing works just so well together. The energy is just so high and her voice is probably the most insane it's ever been. About covers, go with Across the Universe. Then probably her live at home version of I Wanna Dance With Somebody, it's just her at the piano and it's haunting. Going to California also works very well for her
