It is mainly because it covers a wide range. As you can see she went from low to really high and the song can "fool you" as easy while it's not. Robin William's song was already in tenoro high so if you transfer it to soprano down to exact note it gets tricky to catch all the notes and keep it in rhythm at the same time.
Yeah. It's similar to yodeling (as I understand it). In order to yodel you need to be able to switch tone and pitch of you're voice in a split second, as is somewhat similar to songs like this.

I personally believe the ultimate way to see it is through classical singing because when an opera singer does not have balanced passage from low to high notes he or she simply cannot reach the high notes at all or the high notes sound way too intense. I don't have experience with many types of singing in terms of folk music apart from folk of my country (Greek) but I have seen it through my classical music lessons. I have heard for example people stating that reaching the high notes makes the piece hard but that's not the case. I believe the balanced low and passage to high notes is what makes the song truly challenging. And I believe that goes for every type of song. Not only classical but for every type of song.
