Defrosting meat in a hurry? Need chicken, steak, or pork on the table tonight? This hot test kitchen trick defrosts meat fast & quickly, in minutes-and doesn't risk overcooking it, like the microwave does.
We always thaw large cuts (entire roasts and whole birds like chicken and turkey) in the refrigerator, but we also use the quick-thaw method for cuts that are 1 inch thick or less. Simply seal the meat in zipper-lock bags and submerge the bags in very hot (140-degree) water. This way, the meat defrosts quickly and bacterial growth remains in the “safe” range. We’ve found that quick-thawed meat is indistinguishable from meat defrosted in the refrigerator (including chicken breasts, which may turn slightly opaque once thawed).
Note on thawing meat: Do NOT simply leave it out on the counter! Frozen meat left on the counter can begin to grow microorganisms in as little as 2 hours.

Looking up all the defrosting methods makes me think I should be dead with the way I’ve done it all my life. 😄
it’s not unsafe. even if bacteria grows on the surface you cook it off anyway. i’ve done it my whole life
@@hannahcort4345 Its not safe to eat dead bacteria, though you may not notice it right away its still not doing you good.

Y’all new kids are lucky. My day we didn’t have RUclips. Haha we had to take the scolding
You also didn’t have freezers lol

I swear, the comments section is the highlight of RUclips videos 🤣
It actually shows how people barely think
This is like, how you totally thaw chickens
It works! Pro tip, if you want to skip the termometer step, I just opened the hot tap water (it comes out pretty hot in my house) and waited for 10 min, totally worked
So run the water for 10 minutes?
I turned our water heater thermostat up to 150 after I got tired of surprise cold showers halfway through.
That cooks it
Thats a lot of wasted water bro
@@omarctwhere’s it going 😂
Since getting an air fryer my method for cooking a steak is to put it in to the air fryer at 200° F until the internal temp of the meat is 105° F and then finish it in my cast iron grill pan on the range top. This works equally well with thawed and frozen steaks with the frozen ones just requiring more time in the air fryer to par cook to 105°. The slow par cook melts the fat which the grilling in the hot grill pan then seals in. The thicker the steaks the better it works.
I must say, this method worked quite well. Thanks a lot!
Thanks! Worked perfectly.
I have have thawed smaller cuts in water in a bag but was told to use cold tap water. That works but takes a lot longer. I think I will use this method only when I know the meat will hit the heat within just a few minutes.
This is useful.
Exactly
You don't need the bag really unless you're defrosting mince meat. For regular cuts of meat a metal bowl, cold water put in the piece of meat, change the water every 10 minutes.
wrap a towel on the meat and sit on it for 1hr while you are cruising the streets .
lmaoooooo
Hahaha
The best tips are in the comments

i fart to much bro
Thank you for sharing. I forgot to take it out of the fridge and have a lunch meal planned with friends in an hour. Will take your advice and go to town!!
how did it go

Once at a cottage I forgot to thaw a steak. I took it with me to the hot tub. Took about 3 minutes in the ziploc bag.

Ewwww.
Ive been doing this method for a little while now and can confirm I haven't had any problems with the meat. I wasn't aware that this is considered unsafe, but having something thaw for 20 minutes vs a day in the fridge, this to me seems safer. Even though you might be going above the safety zone of 40 degrees, it only stays there for 10 - 20 minutes, and then your seasoning and cooking, so the exposure was very short.
Bad logic, Stu.
@@genevachiado8627 It's great logic. You don't understand micro.
It is. Either won't be an issue though. Microbiology is very poorly taught in the culinary sense. People go ballistic thinking about bacteria, when they don't know they're covered in them.
@Geneva Chiado Which method? The water ? If so how long would you leave them in water for 2.89 lb of 3 thick boneless center cut pieces pork . Or pork chops.
I don't see how it's a problem when I thaw my meat in water, in the plastic it was in the freezer, since I'm cooking it straight after...
I love this channel. It's truly awesome. Cheers!
several years ago I purchased a black cast iron (I think) tray thing at WalMart to thaw frozen food on, on your countef. Its not instant, but it works great & does it pretty quick. It keeps the food very cold as it thaws.
Works on small cuts of chicken, beef h pork. Never used it on fish as I do not cook fish at home
Why don’t you cook fish
Wonderful video, thanks for sharing.
This works, just tried it.
I've always used the trickling cold water method. Pan of cold water, frozen item in the pan, leave under faucet with continuous trickle of cold water. Item stays cold, never gets into the temperature danger zone.
The method shown here reminds me of using a sous vide.
Ez ám a spanyolviasz! Jó nagy marhaság. A hő áramlása mindig a magasabb hőmérséklettől (a melegebbtől) az alacsonyabb (hidegebb) felé történik. A hőátadás sebessége függ a két hőmérséklet különbségétől, ezért legjobb, ha melegvízbe rakjuk a kiolvasztandó anyagot és minél nagyobb felületen érje azt.
It worked nicely, thank you.
I realized I took out the wrong meat this morning 🤦🏻♀️it’s thanksgiving!!
i just run the sink on low in a large bowl with vacuum sealed meat. works fast.
I did this today and worked very well ! :)
I feel like all this use of plastic and heat is our generations lead paint.
Great video, quick and well-explained. Thank you
I don't think this is FDA approved anymore. From what I can see now the FDA doesn't recommend this and the USDA straight up tells you not to
Yea that's what I'm so confused about. I got like 2 hours to cook a meal so I gave up on the internet and asking my mom LOL
this worked well! thanks
I'm going to follow this method great video
10-12 minutes , my mom will be back in an hour, live safer indeed 😌
Sudden hunger in the middle of the night and need to start fasting before 5am...it's 2am, and the meats are rock hard
Hate when my meat is hard at 2 am
That’s what she said
@@Cashbarni That's what she wishes.
This is awesome, thank you!
Thank you for the tip
I've done this for years.....only problem is that the bag of meat wants to float to the top and I have to weight it down with something !
I can't believe this worked for me! Thank you!
Thanks
Thank you! That worked perfectly 👌
“chicken becomes slightly opaque”
that’s called it starting to cook! it’s thawing faster than the inside so is getting cooked while the inside is still frozen
Thank you random lady on the internet now I can have my wings :)
thanks
This is the best method , no doubt👍👍
Every time i have a taste for something, something is always frozen solid.
Found this when searching "thawing in hot water" because my boss at work decided to thaw about 60 pounds of ribs in hot water straight from tap.
I don't think it's safe and I'm probably going to try transferring departments.
It works so well! Thank you 😭
In my country we call A chicken, a bird. We call a turkey a big bird and we call sausage: sosi. Greetings from Malta.
Meanwhile, the oils in the plastic once heated goes in the pores of the meat contaminating the meat before cooking. :(
I'm here cause i was watching resturant nightmares with gorden ramsey, and he ran into an Italian place that used the steamer to thaw a whole bag of chicken and it spoiled it, (gorden almost got sick) The also were putting Hot pizza sauce strait into the freezer or fridge i forget which one which evidently will cause to sour, need to let it get down to room temp 1st
"The also were putting Hot pizza sauce strait into the freezer or fridge...which evidently will cause to sour, need to let it get down to room temp 1st"
No, the reason not to put hot food into the fridge is because it will raise the temperature in the fridge, potentially spoiling the food that is already there.
Thank you Internets and the Test Kitchen .
Thank you
Just leave them in with the heat on for sous vide!
What I was thinking
Mine thawed in a few seconds all I did was place it in my mixtape drawer
This is a hidden 💎
Why would you turn off the heat though? Why not maintain the temperature at 140°?
Soon as the chicken goes in the water the water drops to about 125°. 15 minutes later it's 108°.
What about the vision chuck eye roast ? Do you just leave it and it's vacuum sealed package and put it in the fridge and wait overnight
It also works beautifully with fish. My hot tap water is about 125F. Good enough for defrosting.
Heating water? I might as well start cooking and I’m too broke to keep affording ziplock bags.
Thanks dude
This was incredibly helpful, thanks for the life hack!
When cultivating bacteria, it is best to gently raise the surface temperature so as to allow for the greatest possible spread.
dude expand on this am i not supposed to put the chicken in hot water. ?
@@karmapolice3335 lol, was thinking the same thing
Dont forget to splash the purge around the kitchen
When making microbiology comments, best have an education in microbiology first.
Water circulation cuts down significantly on the time to defrost similar to a convection oven. If you have a sous-vide stick available, I'd set it to a reasonable temperature and defrost it this way in like half the time.
you could just cook it straight from frozen if you're using sous vide anyway
thank you
My mom told me this wouldn't work, she was wrrroonnngggg
I'm looking for this because my mom is currently out and I secretly want to cook chicken that she told me not to touch

awesome
Hello can someone tell me how usually defrost the chilcken. Like how many hours before we should take the chicken out of freezer should I keep in refrigerator or room temperature?
let’s just be honest most of us are here cause our moms told us to take the chicken out the fridge and we forget so we’re here to see if it works so we don’t get our ass beat
Lol what if I dont have a storage bag on hand 😭
Then thats too damn bad
Totally forgot to take my beef out of the freezer, tried this and worked like a charm
Does it work?
hmmmm.... I smell bullshit towards the end
Idiot.
This is really good because it simultaneously gets all the microplastics, which the body needs, right into my meat.
Amazing
Is this method OK for vacuum packed frozen salmon?
Or microwave it 1 minutes
I think this might be okay, but you'd have to cook it immediately
That's the point of defrosting quickly though, is it not?
oh damn that was 5 years ago lmao

sushi are you still alive?
what happens if i use a plastic bag (no seal) and i keep the meat in the water as it heats? is that bad?
Note to non US people: Degrees stated is in Fahrenheit not Celsius. 140 F = 60 C
The problem is the beef is stuck on the styrofoam;-;
Omg.... right!
Why not save water and energy by placing the cut in a pan, then put another heavy bottom pan on top of it. Conduction is your friend!
Nice... I will put mine out on a pan also... works great... slow but great... just flip it over in a 1/2 hour or so.

@@WhiteOwlBlunt Haha, thought the same
Forgot to take out the wings in the morning hahahha. This brought me here.
How would u reheate cooked chicken or meat ( full tray of grilled chicken or gyro) without burning it ??
I read the title as “how to destroy meat quickly and safely”
The slightly oblique chicken, is from a minute amount of cooking and you well know that.
Opaque, not oblique. Oblique chickens are called turkeys.
bacteria can grow, if meat contaminated before freezing there will grow more bacteria while thawing at higher temperature, it must below at +20 °C. BPA and phthalate can contaminate meat too because of this bag. +4°C refrigerator is better solution maybe or flowing water (below +20 °C inside bag, under tap) or microwave.
can we keep it cooler back again or freezer for atleast 2 days
Do you leave the Heat on Medium or turn it off completely or down? Which one?
"Turn off the heat"
Okey doke
+AtThe Whiskey You might as well have put it in the fridge to defrost overnight than wait a month to find out how to do it
"I'm defrosting mince!"
Come think of it, this method can be used to warm packaged food.
Can I use a convection oven heating to 167°F (75°C) to defrost a bigger cut, say a whole tray of pre-seasoned chicken thighs?
Sorry, but I don't give a fuck what the FDA approves of or doesn't......What works is what is important.
+Arch Angel equally, putting chicken in hotter water without a bag works just as well! But it will breed bacteria like crazy and you will have the shits for a week...
+Jonny Swindells Not if the chicken is then cooked to an internal temp of 180 Degrees F or 82 C.
God. You're an idiot.
