    Defrosting meat in a hurry? Need chicken, steak, or pork on the table tonight? This hot test kitchen trick defrosts meat fast & quickly, in minutes-and doesn't risk overcooking it, like the microwave does.
    We always thaw large cuts (entire roasts and whole birds like chicken and turkey) in the refrigerator, but we also use the quick-thaw method for cuts that are 1 inch thick or less. Simply seal the meat in zipper-lock bags and submerge the bags in very hot (140-degree) water. This way, the meat defrosts quickly and bacterial growth remains in the “safe” range. We’ve found that quick-thawed meat is indistinguishable from meat defrosted in the refrigerator (including chicken breasts, which may turn slightly opaque once thawed).
    Note on thawing meat: Do NOT simply leave it out on the counter! Frozen meat left on the counter can begin to grow microorganisms in as little as 2 hours.

      it’s not unsafe. even if bacteria grows on the surface you cook it off anyway. i’ve done it my whole life

    It works! Pro tip, if you want to skip the termometer step, I just opened the hot tap water (it comes out pretty hot in my house) and waited for 10 min, totally worked

    Since getting an air fryer my method for cooking a steak is to put it in to the air fryer at 200° F until the internal temp of the meat is 105° F and then finish it in my cast iron grill pan on the range top. This works equally well with thawed and frozen steaks with the frozen ones just requiring more time in the air fryer to par cook to 105°. The slow par cook melts the fat which the grilling in the hot grill pan then seals in. The thicker the steaks the better it works.

    I have have thawed smaller cuts in water in a bag but was told to use cold tap water. That works but takes a lot longer. I think I will use this method only when I know the meat will hit the heat within just a few minutes.
    This is useful.

      You don't need the bag really unless you're defrosting mince meat. For regular cuts of meat a metal bowl, cold water put in the piece of meat, change the water every 10 minutes.

    Once at a cottage I forgot to thaw a steak. I took it with me to the hot tub. Took about 3 minutes in the ziploc bag.

    Ive been doing this method for a little while now and can confirm I haven't had any problems with the meat. I wasn't aware that this is considered unsafe, but having something thaw for 20 minutes vs a day in the fridge, this to me seems safer. Even though you might be going above the safety zone of 40 degrees, it only stays there for 10 - 20 minutes, and then your seasoning and cooking, so the exposure was very short.

      It is. Either won't be an issue though. Microbiology is very poorly taught in the culinary sense. People go ballistic thinking about bacteria, when they don't know they're covered in them.

    several years ago I purchased a black cast iron (I think) tray thing at WalMart to thaw frozen food on, on your countef. Its not instant, but it works great & does it pretty quick. It keeps the food very cold as it thaws.
    Works on small cuts of chicken, beef h pork. Never used it on fish as I do not cook fish at home

    I've always used the trickling cold water method. Pan of cold water, frozen item in the pan, leave under faucet with continuous trickle of cold water. Item stays cold, never gets into the temperature danger zone.
    The method shown here reminds me of using a sous vide.

    Found this when searching "thawing in hot water" because my boss at work decided to thaw about 60 pounds of ribs in hot water straight from tap.

    I'm here cause i was watching resturant nightmares with gorden ramsey, and he ran into an Italian place that used the steamer to thaw a whole bag of chicken and it spoiled it, (gorden almost got sick) The also were putting Hot pizza sauce strait into the freezer or fridge i forget which one which evidently will cause to sour, need to let it get down to room temp 1st

      No, the reason not to put hot food into the fridge is because it will raise the temperature in the fridge, potentially spoiling the food that is already there.

    Why would you turn off the heat though? Why not maintain the temperature at 140°?
    Soon as the chicken goes in the water the water drops to about 125°. 15 minutes later it's 108°.

    It also works beautifully with fish. My hot tap water is about 125F. Good enough for defrosting.

    Water circulation cuts down significantly on the time to defrost similar to a convection oven. If you have a sous-vide stick available, I'd set it to a reasonable temperature and defrost it this way in like half the time.

    Why not save water and energy by placing the cut in a pan, then put another heavy bottom pan on top of it. Conduction is your friend!

    bacteria can grow, if meat contaminated before freezing there will grow more bacteria while thawing at higher temperature, it must below at +20 °C.     Can I use a convection oven heating to 167°F (75°C) to defrost a bigger cut, say a whole tray of pre-seasoned chicken thighs?
