In Zambia we cook and then dry like your way. They can keep for a long time.when they're dry,some people will eat them just as they're. I find them too difficult to eat,so my method is to soak overnight and then boil.They are yummy

E ... John the Jackfruit eating machine...you the Sweet Potato machine ! Lol Do you use a composting area for your kitchen waste ... gives you a great soil by-product for your garden.
We harvest sweet potatoes in October before the first frost in the fall, then store them in our house which we heat to around 65-70F through the winter months. They get sweet and good after 2-3 weeks, and then we just leave them in cardboard boxes in the house. By late the following spring they will be starting to grow (still in the boxes), but they'll still be good to eat through June the following year, when the summer heat (in the northern hemisphere) starts to age them faster. I think if we had an underground storage space that stayed just a little cooler than the house the sweet potatoes would probably last 12 months or more.

There were eyes rolling and I wondered.......so some people do not know raw sweet potatoes can be eaten and make a good salad. Thank you for sharing. In Kenya, we hardly preserve sweet potatoes.. Hello Eunice, I think to he be sweet potatoes that grew up by with in America are a different variety. They are more red, softer, and and I think more to sweet, they bleed a sugary sap if you cut them. I have never seen anyone preserve them at home in America

Did you just eat a raw sweet potato 👀. I have not tried that. I like it roasted on open fire. Lots of work preserving the potatoes, you did great 👍. In my village, the potatoes are not peeled, we wash, slice them thin and dry them on a flat long table. Not on the roof.
