Just for you the Anda bhurji recipe.. onions, tomato, green chilles, garlic.. Cook in butter, add in turmeric powder, redchilli powder, coriander powder, salt, add in eggs and scramble and add coriander leaves for garnish.. PAV (the buns) is tricky so you can either bake or have the bhurji with buttered bread too

After flame off n food more or less at room temperature sprinkle lemon juice for the authenticity
Hi OSR, you need to come to the Bay Area, visit a street called "el Camino real", there are hundreds of Indian restaurants, food is very close to Indian taste, you get veg and non-veg thali's, you need to try this.

Ashley you just need onions, tomatoes, ginger, green chillies, cilantro, turmeric, chilly powder, coriander powder, salt, butter and eggs.
Add butter in a pan. Then add chopped onions and saute them till translucent, now add chopped ginger and tomatoes and saute them till tomatoes become mushy then add salt, turmeric, coriander powder, chilly powder and saute for a little while again. Now add beaten up eggs and mix them well with the onion mixture. Cook the eggs the way you like them( soft scrambled or well done) and right at the end add chopped cilantro and green chillies with some more butter. Your Masala Bhurji( Indian spiced scrambled eggs) are ready to eat.

Most foreigners take huge bites of Indian food. We normally take smaller bites of the food , especially the curries otherwise they would taste overtly spicier. Go in with smaller bites and accordingly adjust the bite portions as per your comfort levels of spice. Also most spicy foods go well with some kind of soft drinks to wash away the spice aftertaste, and start afresh with the next bite. Enjoy.
