Denken knows who she is, what she did, there is no way he underestimates her...

A subtitle note is that when Denken says "our generation" when referring to knowing who Frieren is, he's specifically talking about mages of his age. He's still within an age that growing up Himmel was still around and what they did was fresh enough because people who were there are still around. It's getting close to 100 years since they defeated the demon king, Frieren helped afterwards with the research of Zoltraak because of a demon she couldn't beat and humanity took that research and ran with it, creating the evolved version that Fern and Frieren use to this day.
To youngsters like Lawine and Kanne, she's somebody they would have read about in a book of history that seems so distant. Frieren didn't have a lot of statues made of her, photographs don't exist so she could be any elf in existence. Elves are rare but not enough to say that every elf a person can possibly encounter is a legendary mage from the hero party. It'd be like going to America and expecting every person to be George Washington.

Something that caught my eye was Wirbel saying demon activity increased exactly 29 years ago, when normally for something that long ago people would just say "30" or "about 30" years. I think we're still at 29 years since Himmel's death? I'm anime-only so it's all speculation, but kind of wild to think that maybe the demon king's forces were like, "That old man might still beat our asses, we can't make a move until he's gone."
I also went back to episode 18 and Frieren mentions losing once to another elf - it looked like she recognized Serie's name so I'm all HMMMMM.

I think is more like Himmel is "hero figure" that as long as he is alive people are strong mentaly and better not attack when they morale is too high.
Well we see that Frieren reacted to Serie name so she must know her to some extent but at the same time Frieren mentioned that she lost to 11 mages with LESS mana, as Serie is portrayed now as much older and with more knowledge I highly doubt she had less mana anytime they could met trough the story.

Old Himmel still kicked demon ass. I won't provide further details on why Old Himmel was on Northern Lands because it would be a VERY MASSIVE SPOILER, but he is still a badass that could easily kill demons or monsters with ease.

Himmel is not just figure. He was a beast. And all demons feared him, which is why they only started making a comeback after he died.
