There are so many recipes and techniques, this one is the best I have found. I followed it to the letter except I used 2 Tbs red food coloring and 4 Tbs beet juice. It made 36 delicious cupcakes!!
I followed this recipe exactly and my cupcakes came out beautiful and was delicious. I thank you for all the additional information you added. Sweet butter is just unsalted butter, they use it so they can control the amount of salt in the cakes when i'm making cakes for myself i use salted butter (as its what i have in my fridge) and not add salt
which foor colouring did u use?? i make cake decorations and i use wilton gel colours i doubt u used that ... plz may i kno which food colouring is better for cake batter? thans ....
@Bubviv in germany we got butter made out of "sour cream" (which is essentially milk that has been made 'sour' microbial) and we got "sweet cream" butter which is produced without lactobacillus. because of the higher ph-value the butter is best for baking.. :)
the mixture of the baking soda (base) with the vinegar (acid )neutralizes the baking soda producing CO2. The CO2 bubbles captured in your dough is what makes the cake spongeous but it doesn allow it to raise like in normal cakes where the baking soda has not been neutralized.
That is the most beautiful and perfect looking red velvet cupcake that I have ever seen. I wish she listed out the ingredients at the and of the video but she didn't.
ok every time I use butter in a recepe I get these heavy thick cupcakes. What am I doing wrong? When I use crisco I get them light and fluffy but as soon as they cool they are dry. I think I might not be mixing the butter and sugar enough, any suggestions?

Hi, why should they be afraid of 'losing' customers? the worlds biggest chefs share their recipes! It's not rocket science ;-) In my opinion regular milk is just fine (i use regular milk in every cup cake recipe) The Buttermilk probably just gives it a little extra kick...

EVERYONE uses pretty much the same recipe. Bakeries don't fabricate their own recipes out of thin air, they select a proven method that works with their tastes. There are often baker's ratios that make recipes relatively uniform.
Also, what makes the cakes different are the ingredients that they use. For example, there are different brands of butter and cocoa that would give the cakes a different taste.

did you put the color in first? i messed that up too! i put the color in first then the cocoa, hopefully that helped...
