Tip: Always split the zucchini in two lengthwise and remove the seeds. That's where most of the moisture is and it can be a bit bitter and odd-tasting. Also, your potato ricer is an excellent way to remove water from zucchini, spinach, etc. Love your channel!!
What I love about this series and about Claire, is that we see just how much of a good communicator and good cook she is - people don't always hit the mark when having a guest on in terms of stepping back and letting them teach, but Claire always seems to give people the space to teach and and it really comes across on screen. There is no ego to it, and it helps me as the viewer feel so much more like I'm involved. Amazing work team - more more more!!
Agreed. Like we know how proficient she is in many of these skills, but she’s learning like a beginner which helps us and which is what I think a master would do.
In my opinion, as a passionate, amateur baker, there is no room in a kitchen for ego if you truly care about making really good things and learning from others' expertise.
what I love is the small kitchen (real) full refrigerator (real) packed freezer (real again) and bumping into another helper in the kitchen. Claire keep it real. It makes me happy.

I wish Natasha directed her comments more towards the camera (us) rather than Claire (a professional who obviously knows how to use a bench scraper, where to place the hot pan of scones, when to brush buttermilk on the scones lol). I admire Claire so much and love how she can make anyone feel like they can bake. She’s so humble and a great teacher!
I feel like it's understood that Claire is the stand in for the viewer, she's having someone come on to teach a recipe that she isn't an expert in so it makes sense for her to be guided throughout the video (and I'm sure there are a lot of variances in how different professionals work so it might seem obvious like when to brush the buttermilk but if you're sharing the recipe then you still provide that information to which I'm sure Natasha also has experience in since she has managed pastry teams)

It would be great to be taught also how to take a basic or "master" recipe for scones and learn how to add this and that to change it to sweet vs savory and this and that.

I love the ideas of indicators for dryness and hydration rather than fixes amounts of ingredients - I just made a batch and they are so tender and fluffy (and the cheese pools are marvellous!)

I love more and more sweet based but turn out savory part of the series. Making it savory means you can eat it as part of your daily meal but also get out that dessert craving 😍 love love love this
I'm totally with you Claire, I've always loved scones but.....well they weren't that great. The way Natasha explained everything gave me so much confidence to go ahead and make scones again.
Made these scones this morning and they are AMAZING! Incredible flavors. Smells like a pizza in the oven, all the cheese and herbs. This is the first time I've made scones and they didn't turn out awful. About to delivery a bunch to friends, this was such a fun bake!
Just made a vegan batch of these! Daiya cheddar, earth balance buttery sticks, and tofu buttermilk. SO good. Thank you for such a timely zucchini recipe.
Made these scones tonight with my 9yr old niece, we bake together all the time so I wasn't that nervous about over mixing but I still handled the dough more than usually would when baking with her. Either way I'm really excited to see how they come out... House smells great!!! Mixed the AP flour with whole grain flour though bc we're experimenting with different types of flour so we can't wait to see how they come out.

I followed the recipe for these scones exactly. They came out amazing. My family loved them, including my 4 and 6 year old kids!
Best scones I've ever made!!! I didn't have enough gruyere so I also diced up some parm and pecorino - highly recommend.
I normally don't have gruyere in the frig, so I used monterey jack. Turned out good. Parm and pecorino sounds good also.
