Maybe the law of diminishing returns. Thats the economic viewpoint. The psychological viewpoint is the ego wants to want more than it wants to have.

Sometimes your nose just develops because you've been collecting and smelling different types of fragrances. And a scent you used to like before, now just doesn't do it for you anymore. It happens in reverse as well... you smell something and are like "what the hell is that. How can everyone rave about it. And months later you sample it again and the magic just happens.

Just find what you like the most and toss the unnecessary stuff, that's it. I've gone through 300+ bottles and stayed with only 3 eventually, wish I could do that earlier.

If you keep them in cool dry place they don't. Some people use those wine storage boxes with temperature and humidity control. I have some bottles from the 90's I bought and they're still good.

Wearing too much, not making good and sure that you like it before you buy. Many fragrances i bought prematurely now i regret it. Blind buys also a bad idea. Fragrance becomes too popular is another thing that is off putting because you want to be original and if everyone is wearing it not good.

I've been wearing fragrances since I was about 12 years old. 44 now and have never ran into anybody wearing the same thing as me. Rarely even smell a good fragrance on another person lol
Addiction and getting bored are the main reasons we move on quickly. We're constantly searching for "that one" scent, and we never find it.
