My great grandfather was from Poland. He ended up in Chicago working as a butcher. All of his kids spoke fluent Polish as he didn't speak English very well. All of his Polish recipes were handed down to his kids. This was one of them. I grew up with Polish food and can't live without it to this day. True delicious comfort food! I would eat stuff like this any day compared to going out for meals. When I was a kid, my grandmother and her sisters would cater family weddings and have Nesco's full of Polish food. I miss weddings like that!

I went to a Polish wedding in Cleveland, Ohio years ago. The Nesco roasters full of kielbasa and sauerkraut was so good. They had cabbage rolls and pierogi too. Most fun wedding ever.

I love Gołabki, grew up eating them, but instead of using tomato sauce, we use gravy and sour cream, as my great-grandparents from Poland didn’t waste the meat juice from a previous meal. Also, soaked them in broth rather than tomato or plain water for extra flavor in the cabbage. Still amazing either way!

I think that this is somehow the first time I've seen anyone try to explain how to make "piggies" in any context other than a family kitchen. The hungarian paprika is definitely worth it, in case anyone wonders. Some have experimented with mushrooms in the baking sauce but I think browned buttery mushrooms on the side with a little extra plain rice and some pickled vegetables is like the most perfect.

All the rest is the same except I put mine in a crock pot with potato quarters and cabbage on high for 3 to 4 hours with either tomato sauce or paste. Good stuff. His way is the right way. Mine is leaner and less greasy. These freeze well cooked or raw.

i love golabki, in my Polish family we always called them "pigs in the blanket", but i know everyone else thinks of 'pigs' as little wrapped hotdogs lol.
It might sound weird, but I love eating my 'pigs' with potato salad...a little of each on the fork for each bite...mmm :)

I don't pre cook the rice or onions. I add 2:1 ground beef to pork, don't boil the cabbage as much as you did. I also make my own homemade tomato soup to put over the cabbage rolls, not watery tomato paste. I use double the cabbage and put a layer under and over the cabbage rolls as well as add sauerkraut on top, then bake it. P.S. I use a roasting pan for more even cooking. My Grandmother was born in Romania, my Grandfather in Poland. My Father was born in Poland as well and spent his first 5 years in Germany, then moving to Canada. It's interesting how a cabbage roll recipe can differ from one family to another.

Do you consider this recipe traditional ? Or is your recipe more traditional ? My parents were born in Poland and have made this all their life and still do. I've never seen my paremts double the cabbage leaves for rolling. Thats too much cabbage to cut through.

My Polish grandmother made her Galumpkis the same way the Polish chef did, just one layer of cabbage, fatty ground beef, rice, spare seasonings, and home-canned tomatoes. But she lived through a childhood of perpetual poverty and hunger in Poland, only to come to the US just in time for the Great Depression. Frugality was permanently embedded in every fiber of her being. But this is what I ate at her house all the time, and it is nostalgia for me. You also didn’t get seconds!

This is a solid recipe. I am American and my grandmother was Slovak, who taught my mother, and now my 24 year old son makes them. The only difference is we use V8 veg juice now. It makes a lovely tomato gravy for the mashed potatoes.

My great-grandparents immigrated from Rawa Poland. Infact my babcias name was Hedwig Rawa. Don't know how many many many of these I have helped make and made in my life love his recipe. Better with day-old rice. Save every trimming put half in the bottom of the pot the other half and the top to keep it extra juicy.

@Jack Stone ... In brings back memories of Western Pennsylvania and Eastern Ohio when I was young. A lot of eastern Europeans on Friday/Saturday nights would make Golabki and Perogis take them to the Church Hall and sell them. Some were cooked and we referred to it as a Polish Fish Fry. I miss those simpler times ... And he has passed away this pass month ... Making the world a little less of what it was ...

My grandmother, who came to the US from Poland in the very early 20th century, used to make Gołąbki. She taught my mother how to make it so we had it at home fairly regularly. She used beef stock instead of tomato paste, bread instead of rice and mix some ground pork with the beef. She would make her own beef stock by boiling some soup bones. I guess the recipe might differ from region to region but that's what I grew up with.
