- Classic High West blended bourbon finished in casks used previously for a fortified wine (served as an aperitif and less strong than cognac).

Fun fact. I've talked to the people at High West, and learned that most these are aged in the Salt Lake Valley. So with temp swings from 110 to -10 degrees, the barrel interaction can be quite dramatic.
Imagine what it’s like in an open air rickhouse in Kentucky. Especially at the top under a tin roof. 0-150 in the span of a year.
Ah the classic episode where Rex gives his tasting notes before tasting it, and Daniel gives his tasting notes solely in facial expressions.
Great review! Pineau de Charente is a aperitif indeed composed of 25% of cognac and 75% of whites ou red grapes juice (pretty sweet). After blending, it's aged in cognac casks during determined times. It's very refreshing and tasty!
I swear every episode is like a new lesson from Rosetta stone. I learn all the words here. Good on you boys for doing this for free.
Love the way you talk about the way the nose evolves in the glass without even tasting. A lot of tasters just sniff and swill. I likes me a bourbon air sandwich for a few minutes before sipping. Great review!
Welcome to the Whiskey channel on a tasty Tuesday. Enjoy the show. Rex rambles on for a bit and finally take a sip around the 5 20 mark. He was making me anxious as Daniel had already tasted and was making weird faces. I needed to know the results!

Gotta love High West's barrel pick program and all the finishes they use. It's fun to collect them and see how different finishes influence the same base whiskey. So far I've got a PX Sherry, Cognac, Islay Scotch, and Macvin du Jura. They're all great, but the Cognac finish is far and away my favorite.
I've only had one of their whiskeys. I definitely need to try some more of their expressions. Great reviee fellas.

Had a store pick of this, and while I love the normal American Prairie I felt this was hot garbage. I thought it was “bad”. Tastes stale if whiskey could be stale. It’s going in the pile to give away when I go back into the office, someone will like it.

I believe asparagus candy canes are real. If I'm not mistaken, the TRY Channel recently featured them on one of their recent episodes of weird Candy Canes.

Daniel says "aperitif" like it's missing the first "i," with only three syllables. It should sound vaguely like "a pair of teeth."
