    Can I smoke overnight if I don’t have the attachment

      Yes. If you're smoking a brisket low and slow all you have to do is make sure to add chips for the 1st 4 hours or until the internal temp of the brisket reaches 140 degrees F. After that, you can leave it over night if smoking at 225 degrees F. It kind of acts as an outdoor oven at that point.

    I have a master build smoker I never smoke briskets before how long do you smoke it and what temperature do you smoke can you help me out please

      225 - 250 degrees. The lower the longer it takes but the better it comes out. Mine take anywhere from 14-20 hours to reach 195 degrees internal temp depending on the size of the brisket and the temp I smoke it at.

      You can, but it might not come out as tender/moist. With brisket you have too smoke it at lower temp because it is a tough piece of meat. By smoking it at a lower temp, you give it a chance to soften up and keep the moisture. The highest I ever go is 250 if I'm in a rush.

      Usually I dont because I choose them carefully at the store. A stiff brisket at the store will need to be trimmed some. A brisket that can bend easily mean it doesn't have alot of hard fat on it.

    actually the brisket is nit rated prime etc. The one and only rating comes from the rib eye only...so it is a brisket cut from the same beef in which the rib eye roast was rated as prime...looks like real good brisket you cooked.....in the old days back in the 50s, i seen old timers in Texas cook low grade select briskets and still make them taste delicious...
