SHAHI TUKDA RECIPE
Preparation time: 30 minutes
Cooking time: 25 minutes
Serves: 2-4
Ingredients:
For Milk syrup
1 ½ cups Milk, दूध
1 ½ cups Sugar, चीनी
4-5 Saffron strands, केसर
Pinch of Cardamom powder, इलायची पाउडर
5-8 Bread sliced, ब्रेड
Ghee for frying, घी
For Instant Rabri
Remaining Sweetened Milk, मीठा दूध
¾ cup Condensed milk, कंडेंस्ड मिल्क
2-4 Bread sliced, crumble, ब्रेड
Pinch of Saffron, केसर
¼ tsp Cardamom powder, इलायची पाउडर
1 tsp Rose water, गुलाब जल
½ cup Milk, दूध
For Garnish
Saffron milk, केसर वाला दूध
Rose petals, गुलाब की पंखुड़ियां
Mint leaves, पुदीना पता
Pistachios, blanched, slice, पिस्ता
Silver warq, चांदी का वर्क
Icing sugar, आइसिंग शुगर
Process
● First, slice the crust of the bread. Cut them into triangles and keep it aside.
● Heat ghee in a deep pan, fry the bread slices on medium heat.
● Fry from both sides till it gets nice golden brown in color and crisp.
● Drain the bread slices on a paper towel.
● Now , dip the bread slices in the milk syrup. With the help of a spoon coat the bread slice evenly.
● Arrange the milk syrup soaked bread slices neatly in a serving tray.
● Sprinkle some cardamom powder on top of it and keep it aside for future use.
For Instant Rabri
● Now strain the remaining sweeten milk in a deep pan, add condensed milk and stir well.
● Add crumble bread slice, pinch of saffron, cardamom powder, rose water and milk mix
everything well.
● Now , blend the rabri to a smooth texture and keep it for cooling.
● Pour the rabri on the milk syrup coated bread slices evenly.
● Keep in the refrigerator to cool.
● Garnish with saffron milk, rose petals, mint leaves, pistachios, silver work and icing sugar.
● Serve chilled shahi tukda.
For Milk syrup
● Heat milk in a saucepot, add sugar, saffron strands and stir well. Let it boil for 2 to 5 minutes. - Хобби

jo jahan payda hota hai aur pala bada hota hai us jagah se use pyaar hona chahye aur garv bhi mehsoos hona chahiye aur yeh lucknow ke hain toh zaahir si baat hai tabhi toh dil me le kar ghoomte hain.

Loved it, my mother makes exactly the same way and she is from Lucknow 😘😍
When ever mom used to make the recipe she adds milk, suger and khoya to make the chashni and also leave the bread to dry out a little bit so that it does not absorbe a lot of oil as fresh bread tends to take in a lot of oil.

Need to try this...
Friends, the sides when you trim them off and don't throw them. Make them small pieces, drizzle with olive oil n some pepper n salt n put them in oven...n make wonderful roasted breads tukra n go very well with tea.
Zero wastage..you can also try this with little old breads may be one or two days post expiry which stays perfectly fine but still we throw it to dustbin.
Check properly for fungus growth or any rancid smell before use.
My Maa used to make similar dish and she calls it "Shahi Toast". After Diwali the leftover syrup of Gulab Jamun is used, buy simply deep frying a bread pieces and soak it in Chashani. That's the only sweet I crave for after Diwali. ❤️

The explanation of Pao was wrong. The word comes from the portuguese word Pao meaning bread. Not from Pao as in 1/4th.
Portuguese word for bread is pão which came to Hindi via Marathi as पाव pāv .

I'm super happy to see breads soaked in milk chashni.. No one else does..My mum makes it in this way.. And i too follow her recipes.. We add orange zarda colour in our chashni.. That orange hue is a treat to the eyes!
