Dear Kanak Ji, Basically Shahi Tukda ek Royal Dish hey. Isko shahi tukda isliye kaha jata hey because this receipe for shahi pariwar by shahi khansama. Ek baar ki baat hey, nawab sahab ko raat mein desert khana tha lekin khansama ke paas koi desert nahi tha, toh usne lunch ki bachi hui roti ko ghee mein fry kar sugar mein dip karke usko milk mein soak kar diya or dry nuts & jafran ki topping laga di. Uske baad usko nawab sahab ko pesh kiya toh nawab sahab ko bahut pasand aaya or is dish ka naam pucha, toh us khansama ke munh se shahi tukda nikal gaya. Tab se hi isko "SHAHI TUKDA" kehte hein. Hyderabad is also famous for a similar dish named Double Ka Meetha.

Authentically deep fried in ghee it is a very popular dish in Hyderabadi weddings and other celebrations served many times with ice cream on the side. It is probably called Shahi because it has the added rich cream added to it.
This was a Mughal delicacy and used to be prepared with Thick Malai. Later on when Mughals were not strong and had to rely on British pensions they did cost cutting in their cuisines. In the later stages Mughals were exiled towards Bengal and they started adding potatoes in Biryani along with meat as a cost cutting measure. That's the reason potato is not there in Biryanis of Awadh, Hyderabad etc, but it's there in Biryanis of Bengal. Similarly to cut the cost of malai, they started preparing it with bread. The second reason is that bread was a product available to royal families only in those days. Hyderabad had Nizam who was a mughal commander and they also introduced bread instead of Malai. Since Bread is known as DOUBLE ROTI, people in Hyderabad started calling this North Indian Mughlai dish as DOUBLE KA MEETHA.

Thats completely different dish then. Maybe its inspired by traditional Arabic dessert baklava.

instead of cornflour, u cd hav added breadcrumb - it binds milk equally and its not an odd combination in shahi tukda like corn flour :)
