It's fine if you don't add Lapsi powder in hot jhol momo. Hot jhol momo recipe here is prepared exactly the way you did it with Lemon. In Nepal, we basically add hogplum powder in normal jhol momo which we call local momo which we can find in every street. Also, you should try making normal / cold(room temperature) jhol momo, it's so good. And, I have been following you and your recipes since a long time. Your almost every recipes are one of the best on RUclips. Love from Nepal.
And it should not look like butter chicken but should look like milk tea. And roughly chopped coriander at the end. And Eaten with a spoon or sinka, not with a fork. Spoon because you bite momo and soup at once. Round momo are preferred more.

Happy to see how well you have researched the ingredients. This is how we make it at home too. 😋 Sometimes we do skip the soya beans or the peanuts for variation. Please do not call it Momos. For every Nepali out there it’s a cringe. We call it मःमः (read as मोमो/momo) eg: a plate of momo. The hog plum is लप्सी /Lapsi and the schezuan pepper corn is टिम्मुर /Timmur (read as Tim-moor). Both are grown locally and have incredible taste. Also, an Indian chef/food blogger who didn’t use ketchup for color/flavor due to lack of research/peer pressure was refreshing.

From Nepal 🇳🇵 .Chef u did great but its incomplete without lapsi (dry hog plum soaked in hot water and made paste) and chopped coriander while blending at last..but loved it..
Just a few things regarding the sauce: Actually sauce served in Nepal won't be very smooth. You want it to have a bit of texture from the nuts. I don't think they actually use tomatoes in the jhol. What you did is very close to the Aachar recipe but then you added water to make it runny and some peatus/sesame. I think that would have tasted better in Aachar form. Jhol is jhol. It's more watery. Here's what I do usually, (I don't have access to hog plums) but, I toast up sesame(white), peanuts and cashew nuts (optional) along with dried red chilli and sechuan peppercorns then blend them with a bit of salt but leave it slightly coarse. Then I add raw onion, green onion, a bit of coriander (also raw) and lemon juice. This gives me the closet jhol that you can get in Kathmandu. But, I think that one also contains buff stock or fat because if you eat jhol Momo in Kathmandu the jhol will leave thick fatty later in your mouth and the bowl and it has a bit of this beefy flavour coming through.
