      ​@@NupurMateYou can skip it if you don't have, just add a bit more of sesame and peanut and follow all the rest of the ingredients. It won't taste bad although

    It's fine if you don't add Lapsi powder in hot jhol momo. Hot jhol momo recipe here is prepared exactly the way you did it with Lemon. In Nepal, we basically add hogplum powder in normal jhol momo which we call local momo which we can find in every street. Also, you should try making normal / cold(room temperature) jhol momo, it's so good. And, I have been following you and your recipes since a long time. Your almost every recipes are one of the best on RUclips. Love from Nepal.

      And it should not look like butter chicken but should look like milk tea. And roughly chopped coriander at the end. And Eaten with a spoon or sinka, not with a fork. Spoon because you bite momo and soup at once. Round momo are preferred more.

    as a Nepali, i love ur achar recipe without any modification to our authentic spices.. i too add exactly the same ingredients in my achar..if u want jhol u add water to ur achar otherwise u just blend the mixture and dip the momo and eat.its the best food ever..

    The First Rule: DON’T call it Momos, it’s Momo (No s). Just Momo म:म: 😊
    You’ve done your research amazingly chef! Kudos to you! 👏👏 That’s exactly how Jhol momo is made! Bravo!
    Also, couple of tips:
    1. Instead of that triphal, you can easily use Sichuan pepper. That’s what we use.
    2. And since the Hog Plum (Lapsi) is seasonal, we dry its outer shell and then grind it to make Lapsi powder. If you have anyone in Nepal, you can ask them to buy it for you. It’s quite cheap. We also use that in fresh achar. And if you are here during the season (now, it’s almost over), you may purchase the fresh ones and then freeze it.
    How to use Lapsi?
    A. Use sparingly. It is quite sour.
    B. Powder: Soak a bit in water first and then add to your desired dish.
    C. Fresh or Frozen: Take a few, boil ‘em till the outer cover opens and then it’s ready! Better take the pit out when it’s warm because it’ll be harder to peel after it cools down.
    3. But yeah, we do use lime as well. So, you’ve done a great job! 👏👏
    And The Last Rule: DON’T call it Momos. 😂 It’s Momo.

    Used a tsp of coriander seeds and a tsp of black peppercorns instead of sichuan peppercorns. Result is wonderful. Thanks chef.

    Hi I am from Uttrakhand but grown up in Nepal and your recipe of jhol mo:mo made me remind of my very beautiful memories of Kathmandu and got water in my mouth 😅. It looks lovely in colour and presentation as well. If possible please share the recipe of chicken choila which is proper Kathmandu Newari culture food.     Happy to see how well you have researched the ingredients. This is how we make it at home too. 😋
    Sometimes we do skip the soya beans or the peanuts for variation.
    Please do not call it Momos. For every Nepali out there it’s a cringe. We call it मःमः (read as मोमो/momo) eg: a plate of momo.
    The hog plum is लप्सी /Lapsi and the schezuan pepper corn is टिम्मुर /Timmur (read as Tim-moor). Both are grown locally and have incredible taste.
    Also, an Indian chef/food blogger who didn’t use ketchup for color/flavor due to lack of research/peer pressure was refreshing.

    Mesmerised by each recipe of yours Chef! I've tried so many of your recipies and all have turned out to be lip smacking delicious. I've never missed out the nuances especially, like you slipped and said 'Daniye ke danthal' instead of Dhaniye ke danthal' between 04:50 - 04:54 mins 🤩🤩 regardless, thank you for taking care of our stomachs❤❤

    Amazing recipe! If i ever get to making this recipe, i will try adding some instant ramen noodles in the end to this dish right before removing it off the stove and enjoy it as a noodle-momo soup similar to how koreans add dumplings in their ramen noodle soup... i mean adding instant-ramen in this home-made jhol without using the masala packet that comes with the instant-ramen...yumm..

    Just a few things regarding the sauce:
    Actually sauce served in Nepal won't be very smooth. You want it to have a bit of texture from the nuts. I don't think they actually use tomatoes in the jhol. What you did is very close to the Aachar recipe but then you added water to make it runny and some peatus/sesame. I think that would have tasted better in Aachar form. Jhol is jhol. It's more watery.
    Here's what I do usually, (I don't have access to hog plums) but, I toast up sesame(white), peanuts and cashew nuts (optional) along with dried red chilli and sechuan peppercorns then blend them with a bit of salt but leave it slightly coarse. Then I add raw onion, green onion, a bit of coriander (also raw) and lemon juice. This gives me the closet jhol that you can get in Kathmandu. But, I think that one also contains buff stock or fat because if you eat jhol Momo in Kathmandu the jhol will leave thick fatty later in your mouth and the bowl and it has a bit of this beefy flavour coming through.
