Fantastic video. As to knowing when kraut was ready, my Dad had a lifelong aversion to kraut because he got into a batch before it was ready as a kid. Got sick as a dog and could never eat it again. Sometimes you learn the hard way.

I've made it lots of times. Pretty hard to screw up. Never had a batch go bad.
Coming from a farming family we grew cabbage and I loved it. We didn't make saurkraut but eat plenty of cabbage with butter and some sugar on it.

My dad taught me, no cutter, just a butcher knife.
