  • Hey Everyone! Join me for the June #threeriverschallenge where I'm prioritizing using the food we have preserved and stored in our homestead pantry and freezers. I'm sharing a few meals and recipes using things I've preserved. I need to work through what I have and free up jars for this years harvest! Let's make some food!

    Recipes:
    Coconut Rice
    1.5 cups jasmine rice
    14 oz can coconut milk
    1/2 cup water
    1/4 tsp salt
    Sweet and Sour Chicken

    Carrot Cake Loaf
    1.5 cups all-purpose flour
    1.5 teaspoons baking soda
    3/4 teaspoon baking powder
    1.5 teaspoons ground cinnamon
    1/4 teaspoon ground allspice
    1/4 teaspoon ground ginger
    1/4 teaspoon salt
    Pinch nutmeg
    3/4 cup brown sugar
    1/4 cup plus 2 tablespoons granulated sugar
    3 eggs
    2 teaspoon vanilla
    3/4 cup safflower oil (or vegetable oil)
    1.5 cups grated carrots
    3/4 cup crushed pineapple
    Bake @ 350 for about an hour or until a toothpick comes out clean.
    12 slider buns (I like Hawaiian rolls)
    12 slices deli ham
    8 slices Swiss cheese
    2 tablespoons mayonnaise
    1 tablespoon Dijon mustard
    1 tablespoon honey
    1/2 cup butter melted
    1/2 tablespoon onion powder
    1/2 teaspoon Worcestershire sauce
    2 tablespoons poppy seeds
    Cover with foil and bake at 350 for 10 minutes, uncover and bake another 10 minutes.
    Buttermilk Biscuits
    3.5 cups AP Flour
    1 Tbsp baking powder
    1 tsp salt
    2 tbsp sugar
    1/2 cup butter(cold and cubed)
    1.5 cups buttermilk
    mix dry and then cut in butter. Add Buttermilk and mix until just combined. Roll 3/4 inch thick and cut into circles. Bake at 450 for 12-14 minutes
    Mexican Casserole
    Cornbread
    1.5 cups cornbread mix
    1 can cream corn
    1/2 cups sugar
    1/2 cup melted butter
    Filling
    1 lb cooked ground beef
    1 can black beans
    1 cup salsa
    3 tbsp cowboy candy
    1 tsp cumin
    1 tsp paprika
    1 tsp chili powder
    1/2 tsp onion powder
    1/2 tsp garlic powder
    salt and pepper to taste
    Add filling to baking dish, spoon cornbread over top. Bake at 350 for about 30 minutes until cornbread is baked thoroughly.

    Your recipes seem to be normal, simple, flavorful with no surprises or off putting ingredients just to be different . YUMMY

      Thanks! I think simple recipes with fewer, quality ingredients can be the most delicious! I do like to be adventurous from time to time though too ☺️

    Great use of the carrots! I will have to try that. Maybe try shredding butter for the biscuits next time. You roll it in the flour then shred. Easy peasy.

    We had a lot of home canned veggies and fruit and lots of wild meat. My middle kiddo had a lot of allergies to preservatives. I did natural as much as possible.

    You could always add some oil and vinegar to your jams and jellies and turn them into salad dressing or marinades

    I love Jessica’s channel, I feel like every one of her videos I’m always learning something new. 😊
    I definitely learned a lot about myself and my family after the challenge, what foods we eat quickly and others that we forget about. I’m focusing on rotating pantry items sticking the unpopular items in the front and same with cold items.

    Thank you Kelsey for the inspiration. I so look forward to your videos each week. I have chicken breasts in the fridge an will be trying the sweet and sour chicken and rice recipe this weekend! I also have a large bag of carrots that I planned to prepare for the freezer so the carrot loaf will also be on the menu. Such a peaceful video that encouraged and inspired me.     Canned carrot cake loaf was intriguing to me. Brilliant. And you now know you won't be canning carrots anymore. Mock pineapple is another thing that interests me. Zucchini no less. Who knew? I love fried potatoes, but seldom make the effort for breakfast. Canned potatoes make perfect sense! Yep, your brilliant.

    That first dish looks so interesting. I feel like it’d taste almost like orange chicken just a little more sweet. Can’t stop thinking about orange chicken with pineapple pieces lol.
    Just moved out and currently work at Wendy’s. Got an idea to save money and get Wendy’s breaded chicken diced and tossed with maybe their sweet and sour sauce, then get home to put it on rice, this video just gave me a whole new idea though.

    Great recipes, Kelsey! I use olive oil in cooking, but have found that my baked goods don't hold up as well when I use it for baking...they fall apart easily. So I use vegetable oil for my baking. You didn't seem to have that problem. Not sure what I'm doing wrong. The carrot loaves/cupcakes looked scrumptious! I love Mexican food so may try your casserole. I make a Taco Pizza that I love with a cornmeal/Bisquick crust and browned hamburger with refried beans and canned chilies for the filling. Of course, cheddar cheese on top. We top it with lettuce, tomatoes, green onions, black olives, sour cream, and salsa. It's so good, warm, and filling. Love all of your content.       Thank you Susan! I like using avocado oil for baking! I really haven’t had any issue with things falling apart with that!

    We don't love canned carrots either. But we love carrots souffle. With the carrots already cooked , it's quick & easy.

    My husband's family called it tamale pie. Sometimes it would have black beans or sliced black olives. Always had corn in it and shredded cheese in the cornbread.

    You have to have balance. Nitrates bother me as well but sometimes I have to have pizza or bacon. You can also grate your butter into your flour for biscuits.

      Oh yes, sometimes I can’t avoid it and sometimes I really want to eat something 😂 I try to do so in moderation and purchase nitrate free when I can ☺️

    Hi Kelsey, what a delicious selection of meals you prepared - great job 👍🏻 I shall definitely be trying the chicken with sweet and sour, thank you for this. In the UK we don't really have canned creamed corn, do you think I could use a can of corn kernels and blitz them in a processor?

    We did the one in January and February, but we have decided to not do this one. We are in grow zone 10b, so I am in the middle of food preservation season. We grow food year round, but in May and June we do a lot of herb preservation, since they will die down once the hot season hits in July.
    We did enjoy the one after New Years and are going to do that one again, but right now my focus are just on a lot of other things.
    In general we don’t go to the grocery very often. It’s something we only do a couple of times a month, since we always have access to fresh produce and eggs. I do buy bulk goods from Azure every 3 months. It’s also, since we don’t keep dairy in our house do to allergies, and i make our non dairy products myself.
    I do love watching you doing it, and love the recipes.

      It is, but also a challenge. I think we eat more seasonally than others, since we eat what’s growing at the time. I do stretch some things like brassicas, which I grow during the winter, and sweet potatoes and carrots, which we grow during the warm season. It’s just a different way of thinking, plus I can get by with a smaller garden than others, do to my eternal growing season. I think the biggest challenge with such a garden, are the logistics of it. I spend a lot of time planning for and planting crops, so I need to keep up on when things will be ready to harvest, so I can plant again.
      I also use more compost and compost tea, since my garden beds, don’t get a break.

    Was that antique yellowware you mixed the batter in? Just a note to be mindful of: Many of these old mixing bowls, such as yellowware, look pretty and farmhouse-ish, but they also often have the glaze worn off in areas and cracks and chips. They made these old pieces with lead and once the glaze has worn off, which most suffer from, this allows the lead to possibly leach into the food. I would not even store food in them leave alone mix a batter. They are nice for decor, though.

    The slider's look good, I'm a bit scared of the baking of the mayo but still going to try them. I Might try a pizza cutter to cut them apart because I think my pan is deeper than the one you are using.

    Hi! I was wondering if you are going to be making that mock pineapple? Could you do a video or share the recipe? I can’t seem to find it in my preserving books and that sweet and sour chicken looked dope. That ground beef pie situation looked so darn good. I want to do that one too. I think I will put some cheddar cheese between the beef and the corn bread spectacular topping. Have a great weekend 😊
