Red Lentil “Spanakopita” or “Börek” Spinach Pie❗️ You Will Fall in Love with This Recipe 😍

- Would you try our amazing Red Lentil Spinach Pie, inspired by the classic Mediterranean recipe, Greek ‘Spanakopita’ or Turkish ‘Börek’?
Our wholesome and delicious pie brings together the rich, earthy taste of red lentils and the vibrant, nutritious spinach, creating a dish that's as healthy as it is delicious. By eliminating flour and extra butter fat, the recipe offers a gluten-free and guilt-free savory pie that is perfect for any meal. You can enjoy its as a snack, or an impressive dish for your family or your guests 😍
Instructions:
Soak the red lentils overnight in the refrigerator.
The next day, rinse the lentils thoroughly under running water.
Strain the lentils well, letting them sit in the strainer while you prepare the spinach mixture.
Take the defrosted spinach and press out all the excess water using a spatula through a strainer.
Transfer the squeezed spinach into a mixing bowl.
Add the chopped onion, feta cheese, olive oil, dill, and ground black pepper to the spinach.
Stir the mixture thoroughly to combine all the ingredients
Go back to the strained lentils and transfer them to a blender.
Add cottage cheese, eggs, olive oil, salt, and black pepper.
Blend until you achieve a smooth consistency.
Add baking powder and blend briefly to incorporate it into the batter at the end of the blending process.
Line a 8.5-inch x 8.5-inch (21.6 cm x 21.6 cm ) square pan with parchment paper to prevent sticking. You can use any pan shape you may prefer.
Pour 2/3 of the lentil batter into the prepared pan, shaking it slightly to distribute evenly.
Spread the spinach mixture over the lentil layer, using a fork to create an even layer.
Top with the remaining 1/3 of the lentil batter, ensuring it covers as much of the spinach layer as possible. Shake the pan gently to distribute evenly.
Optionally, sprinkle the top with sesame seeds and nigella seeds for garnish. You can use any seed you may prefer.
Preheat your oven to 365°F (185°C).
Bake the pie for about 45 minutes, or until it turns golden brown.
Once baked, immediately lift the pie out of the pan using the parchment paper as a handle.
Allow it to cool slightly before cutting and serving.
Ingredients for a 9 portion Red Lentil Spinach Pie:
1 cup (180 g) red lentils, soaked overnight and well strained
300 g frozen spinach, defrosted and squeezed of excess water
1 medium-sized onion (~60 g), chopped
60 g feta cheese
1 cup (200 g) cottage cheese (or sour cream or greek yogurt or a thick plain yogurt)
2 eggs
5 tbsp. olive oil (in total)
1/2 tbsp dried dill or equivalent fresh dill
Ground black pepper, to taste
1/2 tsp. salt
1/2 tbsp. baking powder
Seeds for garnish (optional, such as 1 tbsp. sesame seeds and 1 tbsp. nigella seeds)

Protein: 10.94 g
Fat: 11.64 g
Carbohydrates: 16.58 g
Fiber: 3.3 g

I think that in addition to dried dill, I will use dried mint, and another time I'll use dried tarragon. That will be three times, each one a different flavor simply by changing the dried herb 😊

Yes, the recipe can be easily adjustable to be vegan friendly. My followers on FB already tried different things and they all love the result! For the lentil part, you can actually skip the eggs all together and add a 1/4 cup of the creamy non dairy product you’ll be using (I found coconut cream best suited for this recipe). And, for the spinach part, you can use your greens of choice (some even tried with broccoli) and either tofu or a vegan cheese to make it more tasty 🙏
I'm not trying to be smart, but due to the amount of hexapods & pollinators that die during the making of fake cheese, It's worth considering eating the real deal! 🗝🙏

@drletedelete2928 I have quite a few family members who are vegans & some won't eat fake cheese, due to some of it being made with cashews (poorly paid plantation workers) plus too many insects dying in the making of that kind of cheese. It's their personal preference to give and take on the subject 🙏

I used a simple immersion stick blender, left out the baking powder (forgot) and cooked the pie in my fan oven at 165° Celsius for 50 min (I made a double batch in a 35x22 cm dish, so probably slightly thicker than in the recipe). It’s absolutely delicious! Thank you!
(Anybody else had lots and lots of tiny brown bits coming out of the red lentils while rinsing them? I’ll make sure I’ll always rinse them thoroughly from now on...)

Yes, please, if you see dust and or impurity in your red lentils, rinse them thoroughly before soaking and after soaking 👍
The one available in my place (Canada) are clean and nice, that’s why I usually rinse them thoroughly only once soaked to eliminate the tannins and phytic acid (anti-nutrients that block mineral absorption like iron and zinc) 🙏

This is not börek, thank you for mentioning our börek often stolen and renamed spanakopita. This is more pide style. Börek has many layers of thin hand made pastry.

I only know both recipes are absolutely delicious and amazing and wanted to take it as an inspiration to create something that gluten free people (or everyone looking after their health and managing their carbs intake) can enjoy safely 🙏

Very few if any can be said to be “ours” or “theirs”, despite claims of origin. And even if so, hostile possessiveness is bullying behavior. I know what börek is, and what spanakopita is; your recipe is neither, but the filling is similar to both (except that I use a lot more feta, lol). I don’t follow a GF diet, I just like your recipe. It’s interesting and creative. Thank you.
