An aircraft can manuever to shear an enemy plane's rudder off with its propeller, manuever so as to not completely destroy the ramming aircraft during the collision, or as I said, the pilot can attempt to bail out before impact.
Every plane is a dogfighter if you're brave enough, transport included.
