We call this bhajias or pakoras...in India...chickpea flour is also called Besan...you could make this with potatoes, Bread,cabbage,capsicum or peppers. Thankyou for the recipe with add on of rice crumbs ..turned out great with fish fingers and shrimp too!
I have made this a couple of times now and I am making some at this moment. I like them a little more dried out and for me they taste even better after being in the fridge overnight or so. I make my own hot sauce so I can control the added salt ( which is none) and because I am cheap. These wings must be one of the healthiest snacks/ side dish you can keep in your fridge. Its a cruciferous vegetable dipped in bean batter and no oil or sugar. Thats awesome.
Made these and the sauce last night, served over salad (the ranch was the dressing!). So very good. Not too difficult or much effort at all! Used the air fryer for the wings.

These are amazing! The crunch of the cauliflower and the savory spicy of the buffalo sauce is so satisfying. I used real home made ranch w/ vegan mayo, dairy sour cream and yogurt. I also used 1/2 c. dairy butter in the buffalo sauce. So filling and delicious! Having these as a side for turkey bacon bison burgers this week. These are a keeper. 🧡

Me, too! It's on the thicker side which helps it stick, and that's why it takes a minute or two to get the cauliflower coated. It's also nice because it doesn't drip or puddle-up. All the deliciousness just clings to the cauliflower.

I take a socca/farinata batter (1 cup c/pea flour, 2 tbs EVOO, 1 cup water), beat and season, stand a few hours, then fry as pancakes for wraps. Monson, this looks AWESOME! I love breaded vegetables, but I cannot digest oils and most fats. And since they are so often fried, that means these vegetables are usually off-limits to me. Baked versions either include eggs or often come out soggy - or both. THANK YOU so much for a presenting a no-oil version for those of us who can't or prefer not to use oil. Also, I've been reading recipes that use chickpea flour for decades now, but oddly enough, I've never used it - it's historically not easy for me to find where I live, and I am reluctant to buy a large bag of it when I just need a small amount. However, your video and the comments about chickpea flour have convinced me that I REALLY need to try it - it sounds like it's the magic ingredient that helps to makes these light and crispy. I can't wait to try these - I'm going out and buying some chickpea flour right away! I think I'm going to opt for a garlic-teriyaki-chili sauce instead of the Buffalo sauce, though. 😉

Dude thank you so much! Using chickpea flour as a batter with rice crumbs keeps me from relying on wheat, which my body does not love. Plus will up the protein so won't be all this work for very little return, plus no frying!!! :) Been wanting to make them and this solves all my hang ups. @@MonsonMadeThis It came out tasty, crunchy, actually filling and outstanding, And I'm not like a precise cook or anything so loved that it was easy. I didn't make any sauces yet, I liked it as is. Only down side would be either cauliflower or chickpea flour had me gassy. I may try coconut or almond flour because pastas made from bean flours give me the same problem. But I think you said you might not get the same crunch, so the chickpea flour on it will still be at least a once a week thing, and the other flours more times in the week. So far, this recipe looks promising. I have not liked any previous cauliflower wings I have tried, but I know they can be good because I have had good ones. We call this gobi pakora meaning cauliflower pakora. Has been cooked by Indians forever the main difference being that it is deep fried so I like the idea of baking it. We usually have pakoras with mint chutney or tomato sauce - to die for!!
Rice crumb or rice cones in the uk primary use is in fish and chip shops as a drying and discolouratioin agent if this wasn't used then the prepared chips-fries would be sat incwaterbefore cooking. The end result is s lovely dry fluffy no grease taste texture

I have tried so many recipes but truly yours is the best! I didn’t have the cayenne peppers sauce so I just used instead whatever I found in my fridge: ketchup+chilimayo+mustard+salt,pepper,oliveoil mixture. It was so tasty now I am sad because it’s all gone! :( Thank you! :)

Michael, Looks delicious ! This is similar to Indian pakora ( using chickpea flour and rice flower). Usually, in India, it is fried more often than baked. You should look into that dish too. It’s vegan And can be made with a variety of vegetables. Your recipe looks good and I look forward to trying it
If you wanted to air fry them, I might suggest using frozen cauliflower.. the air fryer doesn't seems to get the insides cooked before the outsides get crispy. If the cauliflower was pretty tender or par cooked, it'll work.

Thanks man, these were really good. I did the first two steps in the oven and then did the last step with the Frank's Red Hot Sauce in the air fryer. Honestly I am wondering how it would work to add the Frank's Hot Sauce to the chickpea flour batter instead of water or in addition to water. Maybe it could go straight away into the air fryer and would kind of simplify the whole process? I know they wouldn't be as visually appealing but maybe it would be much easier and work great for cauliflower buffalo tacos Etc?
Wow! You will have to forgive me because I am kind of working my way through much of your playlist, so may be commenting on a lot of your current and past vids. I am an accidental pandemic vegan, lifelong vegetarian and overall fool in the kitchen. I have never had real buffalo wings, and honestly they never even looked good to me, but yours did. I had mixed success on my first try... I did half in the oven and half in the air fryer. I used a 16 oz bag of frozen cauliflower from TJ's. Perhaps because of the extra moisture from the frozen veg, I had to cook them in the oven longer than suggested at each step. I also lost a lot of the coating in the air fryer want to stay stuck at turning time, but also wanted to burn quickly. Waiting/cooking the "wings" (lower temp if necessary) until the coating comes together and releases for flipping freely is key. On the air fryer, I reduced the temp a couple times to avoid burning. With some babysitting, I came up with several servings of chewy/crispy "wings" while I watched my football. Also, the ranch is amazing and is going on everything for the next few days... i resisted making any dressing with tofu base because I love tofu and didn't want to "waste" it on a sauce... I am an idiot, this ranch and/or your dressing base is amazing. Cheers.
Did I forget to mention that the flavor on the "wings" was amazing? cause it was. I didn't have the official Frank's but used an off brand cayenne sauce and plenty of extra cayenne to put my face on fire. Don't skimp on the onion or garlic, imho!
I appreciate the comments, and I love being able to help people. I think that using frozen cauliflower is good, but I would use a different cooking technique. Check out this video: ruclips.net/video/IwoM3quHs7Y/видео.html . Just think of frozen as "pre-cooked". It's already broken down from the freezing process, and, yeah, it can spit out a lot of water. Just use the same buffalo sauce, and you should be good.
I'm glad you enjoyed it!!! Pretty much any cayenne sauce will work, and give that "buffalo" flavor. Other hot sauces like sriracha will taste good, too, but it won't have that same flavor. And I'm with you on the garlic. The more the merrier.
@@MonsonMadeThis Yes, i pretty much split the diff on the two treatments the second time I made this recipe. Also, I have not found the "Rice Crumbs" at any of my local Trader Joe's, HOWEVER, if you have an unsweetened vegan crispy rice cereal, like a generic Chex or rice crispies, the crumbs from that (or just crunching it up) works great! I love that discovery because gf breadcrumbs are also too expensive and hard to find in my area.

Howdy! Welcome! To be honest, they don't reheat that well. The cauliflower is like 90% water, so after they've cooled and been left in the fridge overnight, they just don't have the same texture. I have reheated them in my air fryer the next day, and although they tasted good, and did get a bit crispy, they still were not the same as they were when fresh out of the oven. You might get one or two converts with them when they're hot out of the oven, but I don't think you'll impress anyone with day old ones. Haha. Best of luck! Let me know how it goes.

Hi Madison- Many Walmarts now carry chickpea flour if you have one close by. I think I have also seen at my local grocery store (east coast in US) in international section. All south Asian/ Indian grocery stores will also carry this (it is called ‘besan’).
Ingredients: 1 pound (about ½ of a large head) cauliflower, cut into “two bite”-sized pieces For the batter: ½ cup (45 g) chickpea flour 1 tablespoon (5 g) nutritional yeast ½ teaspoon onion powder ½ teaspoon garlic powder ¼ teaspoon smoked paprika ¼ teaspoon cayenne pepper (optional) ¼ teaspoon black pepper ½ teaspoon salt, or to taste ¼ cup 2 ounces water 2 to 3 tablespoons rice crumbs or bread crumbs of choice For the Buffalo sauce: ¼ cup Frank’s Red Hot sauce or cayenne pepper sauce 1 to 2 tablespoons olive oil or melted vegan butter* ¼ teaspoon black pepper To serve: Guilt-Free Vegan Ranch Dressing Directions: Prepare the cauliflower by cutting into “two bite”-sized pieces. Set aside. In a very large bowl, combine the chickpea flour, nutritional yeast, onion powder, garlic powder, smoked paprika, cayenne pepper, black pepper, and salt. Stir in ¼ cup of water to form a paste. If the mixture is too thick, add another tablespoon of water. If it’s too thin, add a bit more chickpea flour. With a rubber spatula, stir the cauliflower into the seasoned chickpea flour paste. Continue to stir for a minute or two, trying to get the cauliflower completely coated. Sprinkle on rice crumbs, and gently stir to coat. Line a large baking sheet with parchment paper, and distribute the cauliflower evenly, making sure none of the "wings" are touching. Bake for 15 minutes at 425 F. Turn over each “wing” and bake for another 15 minutes. While the cauliflower bakes, prepare the buffalo sauce by combining the sauce ingredients in the very large bowl. Remove the cauliflower from the oven, and gently toss the cauliflower in the sauce, being careful not to break off the breading. Return the cauliflower to the baking sheet, and bake for another 15 minutes, or until the “wings” are crispy again, and starting to darken. Serve immediately with a side of Guilt-Free Vegan Ranch Dressing.

Thank you! One of the best recipes I've ever made! I tried to APPLAUD but it kept saying "unknown error" (not a username joke btw). The only problem with the recipe is I needed 1/2 cup of water and not 1/4 cup. With 1/4 cup it was still super clumpy and mostly dry!

I made them and used almond milk instead of water. I made teriyaki and BBQ and I liked the teriyaki the best. That flour has a distinct flavor so I’m going to have to figure out a way to offset that. Thanks for the recipe I don’t want to fry so this was perfect.

@@purityandplants I’ll message you this evening after I make them. I’m doing the same, I’m 90 days in and I’m never going back. It’s easy to replace seafood and meat with veggies it just takes a little more preparation time. I don’t eat soy very often either but that’s a personal choice.
Thanks! My mom said that she made them in the air fryer, and found that hers was too small, and she had to do too many batches to cook them all. Also, she found that the cauliflower was not cooked by the time the breading was browned. My advice would be to use frozen cauliflower if you want to air-fry. That way the insides cauli is already cooked, and you can air-fry them for less time. From personal experience, though, they do reheat well using an air fryer.

Monson, this looks AWESOME! I love breaded vegetables, but I cannot digest oils and most fats. And since they are so often fried, that means these vegetables are usually off-limits to me. Baked versions either include eggs or often come out soggy - or both. THANK YOU so much for a presenting a no-oil version for those of us who can't or prefer not to use oil. Also, I've been reading recipes that use chickpea flour for decades now, but oddly enough, I've never used it - it's historically not easy for me to find where I live, and I am reluctant to buy a large bag of it when I just need a small amount. However, your video and the comments about chickpea flour have convinced me that I REALLY need to try it - it sounds like it's the magic ingredient that helps to makes these light and crispy. I can't wait to try these - I'm going out and buying some chickpea flour right away! I think I'm going to opt for a garlic-teriyaki-chili sauce instead of the Buffalo sauce, though. 😉

Dude thank you so much! Using chickpea flour as a batter with rice crumbs keeps me from relying on wheat, which my body does not love. Plus will up the protein so won't be all this work for very little return, plus no frying!!! :) Been wanting to make them and this solves all my hang ups. Only down side would be either cauliflower or chickpea flour had me gassy. I may try coconut or almond flour because pastas made from bean flours give me the same problem.
But I think you said you might not get the same crunch, so the chickpea flour on it will still be at least a once a week thing, and the other flours more times in the week. Regardless this answers my chicken flavor cravings and you've given me a new meal option. So I can't thank you enough.

So far, this recipe looks promising. I have not liked any previous cauliflower wings I have tried, but I know they can be good because I have had good ones. We call this gobi pakora meaning cauliflower pakora. Has been cooked by Indians forever the main difference being that it is deep fried so I like the idea of baking it. We usually have pakoras with mint chutney or tomato sauce - to die for!!

Rice crumb or rice cones in the uk primary use is in fish and chip shops as a drying and discolouratioin agent if this wasn't used then the prepared chips-fries would be sat incwaterbefore cooking. The end result is s lovely dry fluffy no grease taste texture

I have tried so many recipes but truly yours is the best! I didn’t have the cayenne peppers sauce so I just used instead whatever I found in my fridge: ketchup+chilimayo+mustard+salt,pepper,oliveoil mixture.

I am only a vegetarian and I've recently made cauliflower "chicken wings". However, I made honey garlic sauce. It was delicious!!!!
Michael, Looks delicious ! This is similar to Indian pakora ( using chickpea flour and rice flower). Usually, in India, it is fried more often than baked. You should look into that dish too. It’s vegan And can be made with a variety of vegetables. Your recipe looks good and I look forward to trying it

If you wanted to air fry them, I might suggest using frozen cauliflower.. the air fryer doesn't seems to get the insides cooked before the outsides get crispy. If the cauliflower was pretty tender or par cooked, it'll work.
Maybe I would air fry them a bit before putting the batter on?

Thanks man, these were really good. I did the first two steps in the oven and then did the last step with the Frank's Red Hot Sauce in the air fryer. Honestly I am wondering how it would work to add the Frank's Hot Sauce to the chickpea flour batter instead of water or in addition to water. Maybe it could go straight away into the air fryer and would kind of simplify the whole process? I know they wouldn't be as visually appealing but maybe it would be much easier and work great for cauliflower buffalo tacos Etc?

Wow! You will have to forgive me because I am kind of working my way through much of your playlist, so may be commenting on a lot of your current and past vids. I am an accidental pandemic vegan, lifelong vegetarian and overall fool in the kitchen. I have never had real buffalo wings, and honestly they never even looked good to me, but yours did. I had mixed success on my first try... I did half in the oven and half in the air fryer. I used a 16 oz bag of frozen cauliflower from TJ's. Perhaps because of the extra moisture from the frozen veg, I had to cook them in the oven longer than suggested at each step. I also lost a lot of the coating in the air fryer want to stay stuck at turning time, but also wanted to burn quickly. Waiting/cooking the "wings" (lower temp if necessary) until the coating comes together and releases for flipping freely is key. On the air fryer, I reduced the temp a couple times to avoid burning. With some babysitting, I came up with several servings of chewy/crispy "wings" while I watched my football. Also, the ranch is amazing and is going on everything for the next few days... i resisted making any dressing with tofu base because I love tofu and didn't want to "waste" it on a sauce... I am an idiot, this ranch and/or your dressing base is amazing. Cheers.
Did I forget to mention that the flavor on the "wings" was amazing? cause it was. I didn't have the official Frank's but used an off brand cayenne sauce and plenty of extra cayenne to put my face on fire. Don't skimp on the onion or garlic, imho!
I appreciate the comments, and I love being able to help people. I think that using frozen cauliflower is good, but I would use a different cooking technique. Check out this video: ruclips.net/video/IwoM3quHs7Y/видео.html . Just think of frozen as "pre-cooked". It's already broken down from the freezing process, and, yeah, it can spit out a lot of water. Just use the same buffalo sauce, and you should be good.
I'm glad you enjoyed it!!! Pretty much any cayenne sauce will work, and give that "buffalo" flavor. Other hot sauces like sriracha will taste good, too, but it won't have that same flavor. And I'm with you on the garlic. The more the merrier.
@@MonsonMadeThis Yes, i pretty much split the diff on the two treatments the second time I made this recipe. Also, I have not found the "Rice Crumbs" at any of my local Trader Joe's, HOWEVER, if you have an unsweetened vegan crispy rice cereal, like a generic Chex or rice crispies, the crumbs from that (or just crunching it up) works great! I love that discovery because gf breadcrumbs are also too expensive and hard to find in my area.
I also used the batter and crunchies (sans buffalo sauce) on button mushrooms and strips of portabella mushrooms.... amazing

Howdy! Welcome! To be honest, they don't reheat that well. The cauliflower is like 90% water, so after they've cooled and been left in the fridge overnight, they just don't have the same texture. I have reheated them in my air fryer the next day, and although they tasted good, and did get a bit crispy, they still were not the same as they were when fresh out of the oven. You might get one or two converts with them when they're hot out of the oven, but I don't think you'll impress anyone with day old ones. Haha. Best of luck! Let me know how it goes.

Hi Madison- Many Walmarts now carry chickpea flour if you have one close by. I think I have also seen at my local grocery store (east coast in US) in international section. All south Asian/ Indian grocery stores will also carry this (it is called ‘besan’).
I think chickpea flour is a really important ingredient in this particular recipe. I can't really suggest a substitute in this instance.

Ingredients:
1 pound (about ½ of a large head) cauliflower, cut into “two bite”-sized pieces
For the batter:
½ cup (45 g) chickpea flour
1 tablespoon (5 g) nutritional yeast
½ teaspoon onion powder
½ teaspoon garlic powder
¼ teaspoon smoked paprika
¼ teaspoon cayenne pepper (optional)
¼ teaspoon black pepper
½ teaspoon salt, or to taste
¼ cup 2 ounces water
2 to 3 tablespoons rice crumbs or bread crumbs of choice
For the Buffalo sauce:
¼ cup Frank’s Red Hot sauce or cayenne pepper sauce
1 to 2 tablespoons olive oil or melted vegan butter*
¼ teaspoon black pepper
To serve:
Guilt-Free Vegan Ranch Dressing
Directions:
Prepare the cauliflower by cutting into “two bite”-sized pieces. Set aside.
In a very large bowl, combine the chickpea flour, nutritional yeast, onion powder, garlic powder, smoked paprika, cayenne pepper, black pepper, and salt. Stir in ¼ cup of water to form a paste. If the mixture is too thick, add another tablespoon of water. If it’s too thin, add a bit more chickpea flour.
With a rubber spatula, stir the cauliflower into the seasoned chickpea flour paste. Continue to stir for a minute or two, trying to get the cauliflower completely coated. Sprinkle on rice crumbs, and gently stir to coat.
Line a large baking sheet with parchment paper, and distribute the cauliflower evenly, making sure none of the "wings" are touching.
Bake for 15 minutes at 425 F. Turn over each “wing” and bake for another 15 minutes.
While the cauliflower bakes, prepare the buffalo sauce by combining the sauce ingredients in the very large bowl.
Remove the cauliflower from the oven, and gently toss the cauliflower in the sauce, being careful not to break off the breading.
Return the cauliflower to the baking sheet, and bake for another 15 minutes, or until the “wings” are crispy again, and starting to darken.
Serve immediately with a side of Guilt-Free Vegan Ranch Dressing.

Definitely. The time will be a lot shorter, though. And depending on the size of your air fryer, you will probably need to cook them in a few batches.

For this recipe, chickpea flour is key. Other lentil or bean-based flours would work, or in a pinch, rice flour. But chickpea flour is paramount.

Thank you! One of the best recipes I've ever made! I tried to APPLAUD but it kept saying "unknown error" (not a username joke btw). The only problem with the recipe is I needed 1/2 cup of water and not 1/4 cup. With 1/4 cup it was still super clumpy and mostly dry!

I made them and used almond milk instead of water. I made teriyaki and BBQ and I liked the teriyaki the best. That flour has a distinct flavor so I’m going to have to figure out a way to offset that. Thanks for the recipe I don’t want to fry so this was perfect.
Maybe you can toast the flour first and then continue with the recipe. That’s a tip I heard on a different video that used garbanzo bean flour.

Thanks! My mom said that she made them in the air fryer, and found that hers was too small, and she had to do too many batches to cook them all. Also, she found that the cauliflower was not cooked by the time the breading was browned. My advice would be to use frozen cauliflower if you want to air-fry. That way the insides cauli is already cooked, and you can air-fry them for less time. From personal experience, though, they do reheat well using an air fryer.
