🌽 Corn Fritters:
1/3 cup flour + 1 Tbs
1 tsp sugar
1/8 tsp baking soda
Dash of salt
Dash of pepper
1/4 cup juice from canned corn
2 heaping Tbs corn
Mix together, then drop spoonfulls of batter into hot oil. Flip until brown on all sides and remove onto a paper towel. Serve with a side of ketchup to dip in.
🧁 Sausage Breakfast Muffins (Makes 4)
1/2 cup flour
1/4 tsp baking soda
1/8 tsp salt
1 egg yolk
1/4 tsp vanilla extract
1/4 tsp cinnamon
2 Tbs oil
2 Tbs sugar
1/4 cup water
2 Tbs Sausage
Mix all ingredients together and spoon into greased muffin tins (use margarine to grease). Bake in preheated oven for 12 minutes or until slightly browned on top. If desired, sprinkle cinnamon sugar on tops before baking to make a crisp top. Makes 4 muffins.
🥚 Merangues (Makes 15)
1 egg whites
1/4 cup sugar
1/4 tsp vinegar
1/4 tsp vanilla extract
Preheat oven to 200F. Whip your egg whites until stiff peaks form, then gradually add in the vanilla, sugar, and vinegar. Once sugar is fully disolved (no grittyness when you rub some of the mixture between your fingers), place 2 inch dollups on a cookie sheet lined with parchment paper. Bake in 200F oven for 1 and a half to 2 hours. When they are done, they should come off the parchment paper effortlessly. Enjoy!

I absolutely adored this series of cooking for one. You are so inventive with limited items and money.
You are really making great use of your budget. I like your idea of making so many different shapes of baked goods from that double batch of dough. That sure opened up the variety of dishes you could make. Very creative. Thank you for doing this.
Thanks so much! 😊 I'm enjoying trying my hand at making several bread related things I've never gotten to make before. Thanks for watching!
It's amazing how many different dishes you have made. Maybe for a desert you could fo some pineapple upsidown cupcakes. Also maybe use the flour make some tortillas for breakfast and or lunch tacos or burritos. Also could slice up and fry some for tortilla chips as a side.
Yes to the pineapple upside down cupcakes, because why not? 🤗🍍🧁
I love how you are frugal with your ingredients but not stingy. You ate quite well and did not deprive yourself of anything. Perfect.
I am purely amazed at how you have made so many delicious-looking meals. I am widowed, living alone, and this series is helping me very much. Thanks! Diane
"A stew situation" made me smile. Sounds like something I'd say. Really impressed by the variety you demonstrated.
😅 Sometimes I surprise myself with what I wind up saying. I'm glad it made you smile, and glad you're enjoying the series.
Wow you are absolutely amazing, maybe a spinach quiche? Chicken and dumplings, pot pie, scallop potatoes with ham mixed in .
When I make muffins, I like to spray the paper muffin liners with Pam, or other pan spray, and those muffins come out like magic
Great Job!! I absolutely love watching you come up with some amazing meals. I wonder if you could make a Quiche with a few ingredients? Maybe a Chicken Fried Rice meal. But anyways I know you will come up with some great ideas!! Thanks so much for sharing. :)
I was thinking a quiche as well. The ham, eggs, spinach, can't remember if there was cheese left and some of the jalapeño. Fried rice was another meal I was thinking about.
Amazing job as always. We are so blessed to be able to eat without worrying about affording food. However, so many are not. What you are doing is an amazing contribution to help so many people. You have such a talent for this and ideas to do with food. Thank you for doing this!
This entire series was so ridiculously impressive.
Growing up my mom pinched tube biscuits in thirds, fried, tossed in a paper bag with powdered sugar. Thanks for sparking that memory. She also saved cooking oil and strained it if needed with a coffee filter. Love these kinds of vids. Great job!!
You are amazing! 😮 You got so much from so little and you will get one more week. Amazing just amazing.
Always amazing! Curious if the meals are satisfying and you aren’t finding yourself hungry or if at the end of the challenge is there anything your felt like you were missing or would do differently.
Make hot spinach dip and seasoned bread to dip in it( like bagel or pita chips), make homemade marmalade or combo of pineapple & orange marmalade or pineapple jam. Use orange peels to make candied fruit peels( oh so good), make rice balls with aioli dipping sauce, make a chicken loaf from your chicken( minced) and stuffing mixture. Make mini ham and spinach egg bites, a spinach soufflé, frittata. Make homemade green bean casserole with homemade fried onions. Make broccoli cheese soup or broccoli & cheese Mac & cheese out of pasta. Use all leftover veggies to make a homemade vegetable soup: uses up onion, potato, carrots, green beans( which I would cut in half and use only half in the soup and save other for making something else), corn, little tiny bit of tomato paste, dab of spinach( might make it little drab looking though), add in some of pasta cut in half to stretch it for a side or another meal. Make a breakfast bread pudding with the drained pineapple ( reserving the juice), serve with combo of some orange juice & pineapple juice made into a sweet sauce drizzled over it. Serve bread with soups and meals. Baste your bread knots with butter & garlic to serve with soups etc. If you make some garlic knots next time make them by spreading a softened butter & garlic mixture on inside like you would for cinnamon rolls then tie in knots and then baste again with melted butter& garlic before baking. Also you could have made cinnamon rolls out of some of that bread or cinnamon swirl bread( $5 in store). If I made the chicken loaf I would make a chicken gravy to drizzle over the slices. If you make the candied fruit peels will take about 4 oranges. These can also be dipped in chocolate after dipping into sugar and drying. The bread pudding will use up 16 oz of bread that is day old leaving out on counter for a day or so. Then use 3 eggs, vanilla, milk sugar( or can of sweetened condensed milk) beat all together until well combined, soak bread in it in large bowl ( not dish you are going to bake it in or will stick). Spray a 13x9x2 inch dish and bake in a 350 degree oven for around 45 minutes or until done. Cut into pieces and serve with sauce. After puddling has been cooled and placed in frig over night…pull out and cut into individual servings that you will wrap in foil for heating in oven or plastic wrap for heating in microwave…so you can have this when ever you want. It can be served cold too. If you want can use melted ice cream for custard…just add eggs. Or use ice cream to top hot bread pudding for a dessert. Whew! 😂 Hope all of this helps!
Do you have a cooking channel? I would watch it😊
WOW! I'm definitely going to be featuring a few of these idea in the next one! Thanks forntaking the time to Brainstorm and share! 🥰
WOW the variety of bread items you made from one recipe ! !
I agree I really like this series.
This has been one of my favorite cooking series. I can't wait to see what you come up with next. For my personal diet I would have to have more protein added. Looking at what you have left, I think that would be possible. Thank you for doing this. I'm enjoying it very much
i love you making micro-recipes
I enjoyed this video. Thanks for the tips. Wow I feel you will have lots left after next week. Your great!
Thanks so much! I hope you're doing well today! 💗
Great job- I loved all the different items you made from the bread dough!
You have the best creativity! How about a quiche Lorrraine with your spinach and ham? Tropical muffins\cake with your oranges and pineapple? Or even an orange and pineapple compote to put over pancakes or scones or biscuits? Sweet n sour (with the orange or pineapple) chicken and green beans and onions over rice? Bbq chicken Or bbq ham sandwich? A "hamburger" patty made with spiach, ham, jalepeno and stuffing mix? Pasta carbonara with ham fried crispy instead of bacon and green beans? Poached eggs over English muffins or toast? caramelized onion and jalapeno deviled eggs?
This was a great series. love to see this for a family. Your so creative. please do more, like this.
