This series has been so awesome! I started watching this one the other night and I finished tonight! I love how many options you give with so few ingredients.
I can't tell you how impressed I am with your creativity, the way you utilize everything (and so deliciously) You really have inspired me and I'm sure many others, thank you.
Amazing what you've done! How about some orange glazed cooked carrots, cream of broccoli, potato and ham soup, sausage breakfast muffins with the pancake mix maybe, carrot or corn fritters, broccoli rice casserole, veggie soup, green beans sauteed with onions and ham, fried rice,, potato rounds topped like pizza, pickled carrots or onions, broccoli, ham and cheese baked potato, cheesy corn, ham croquette, cinnamon bread/toast, veggie tots, tomato gravy with sausage (made by making a brown gravy then adding in tomato paste) served over biscuits or rice, fried green beans or broccoli (dip in flour mixed with water then fry in oil). I hope some of this gives you inspiration. I don't know how you do it. My brain is numb now from doing all of that brainstorming. Lol
High five and great creativity on week two. Can't wait for week three. Put the sugar into a blender and it'll get sort of powdery. The cupcakes were a lot like the quick loaf we had this week throwing in whatever - carrot, yellow squash, banana, orange with its zest, raisins, AP flour, oatmeal and whole wheat flour and spices.
I'm so glad youre enjoying it! I'm enjoying it too and seeing how far everything can stretch without repeating a lot of meals has stretched my creativity 😉 Thanks for coming along on this journey!
Such great variety and adequate serving sizes. I am from a large family and now just myself, so cooking for 1 is a real challenge. Leftovers are fine, but only once or twice, even when yummy. Thank you so much!
Thank you! I put a lot of the mini 1 Person size items on this past year's Christmas list, so you're seeing a bunch of what I got for Christmas in the process 😅 Glad to hear you're enjoying the videos!
Wow!! Even more new recipes!! Great video! I'm with you about potatoes for breakfast, they are wonderful! You've inspired me with your recipes! Have a great week!! The veggies, rice and some sausage would make some great stir fried rice!! Those ice cube trays are brilliant! I'm gonna get some!
Yum! That sounds delicious! 😋 I do love those ice cube trays - between the lids that allow you to stack them and the silicone bottoms it makes them super easy to use. Thansk for watching! 🥰
Aww the mini pizzas are so cute!!☺ Oh and don't you feel bad about the pineapples. One of my best friends told me his favorite toppings are pineapples ham, and olives. At the same time yeah😆I personally also like some pineapples on top of pizza sometimes. And I love olives too! I am looking forward for you next video ☺
Thank you for the feedback and for understanding my love of pineapple on pizza 😉 I'm glad I'm not alone in that, and so glad to hear you enjoyed the video! 🥰
Thank you so much! 💓 It's been hard to stay in budget lately, groceries still are a larger part of our budget than I would like, but we both got this! Thanks for the encouragement!
I can't believe the variety you have with a handful of items! Simply amazing meals with no repeats! Love this cooking for one! Hint: if the bowl you used to mix the chicken casserole in was Correlle, you could've put it right into the oven and saved cleaning the casserole dish. How about a ham broccoli and cheese pasta or rice? You've done so many I can't remember if you've made it or not.
Thank you for this series! This such a helpful way to stretch the grocery budget. Everything looks so delicious! I can’t wait to try some of these suggestions.
Some other ideas I thought of: Small pasta salad with vinegar and oil dressing with the Italian, garlic, salt and pepper and shredded carrot, some broccoli maybe. Sausage rice soup with the veggies and bread on the side or a crouton seasoned with oil, garlic, Italian. Maybe an orange vinaigrette, shredded carrot side salad. Potato onion sausage hash.
If you like doing breakfast sandwiches with English muffins a lot, I would suggest investing in a breakfast sandwich maker. I have one (got it from Target), and I love it for making breakfast sandwiches.
Some of that pineapple or the juice from the tin would have been nice in those carrot muffins. You might want to try your hand at an Ermine (or 'boiled milk') frosting, which requires milk, but because the sugar gets cooked, it's super-creamy and not gritty at all (it's also perfect as a small-batch frosting, as it doesn't store well for later use).
I would say yes, but I don't think it is the meal making that has taken the longest. The longest part is in positioning the camera, making sure all measurements are taken and in shot (half the time I just eyeball measurements when I'm making meals usually, but for this I'm trying to be exact in case others are wanting to make something themselves), and editing and making the voice-over. As far as making the meal, it's not taking any longer than creating a meal would usually take for me - in fact, with the frozen rice and precooked frozen noodles it's actually shaved off a ton of time. I timed most of the meals this video because I had only certain times in between my job that I could film and on average each meal took about 30min with all the set up for filming. Thanks for the comment and for taking the time to watch! 🥰
I try to post once a week, but when I'm not doing a series it sometimes becomes every other week as I work full time as an RBT and don't always have time for both my job and RUclips. Glad you enjoyed this one, and hope you enjoy the next one just as much! 🥰
80 dollars is more than half i get from ebt. I'm going to get rid of as much as i can tomorrow and clean I have to run a radio net at 8:45 If I get up at 7:30 I'll take the dogs for a half mile walk first we can go farther than that maybe around 1pm we'll go on a long one. Day 12 you almost made two full weeks. I have to make my casseroles tomorrow sort of like your chicken casserole but I'm using tomato sauce instead of cream. I think you are stretching it at least a full 2 weeks your title could say two weeks for 40 dollars that's 20 a week something I could of live off.
You are so creative and amazing! I know you put a LOT of time and energy into your videos and I truly appreciate you!
You're the best! I'm so grateful to have you here 💛 Thank you for always being so kind and encouraging!

You can maybe use some of the creamer with the rice, sugar and cinnamon to make some sort of rice pudding as a breakfast.
Sounds yummy! Thanks for the suggestion! 😊
You are absolutely amazing what you can make yourself on that small budget! I have 4 in my family and struggling to feed us on our budget
Thank you so much! 💓 It's been hard to stay in budget lately, groceries still are a larger part of our budget than I would like, but we both got this! Thanks for the encouragement!

Thank you for this series! This such a helpful way to stretch the grocery budget. Everything looks so delicious! I can’t wait to try some of these suggestions.
Some other ideas I thought of:
Small pasta salad with vinegar and oil dressing with the Italian, garlic, salt and pepper and shredded carrot, some broccoli maybe.
Sausage rice soup with the veggies and bread on the side or a crouton seasoned with oil, garlic, Italian.
Maybe an orange vinaigrette, shredded carrot side salad.
Potato onion sausage hash.
Great idea! I used your Pasta salad idea in my most recent meal video. Thank you for sharing it!

Would you say that this has been time consuming so far? This is so creative and you aren't repeating the same meals which is impressive
