    LAUKI KOFTA RECIPE:
    Preparation time: 20 minutes
    Cooking time: 30 minutes
    Serves:2
    Ingredients:
    For Making kofta
    200 gms Bottle Gourd, grated
    Salt To Taste
    ¼ tsp Asafetida
    ¼ tsp Turmeric Powder
    ½ tsp Ginger Garlic paste
    2 Green Chilli , chopped
    2 tbsp Coriander Leaves , chopped
    2 tbsp Moong Dal, Soaked
    2 tbsp Curd, thick
    ¼ cup Gram Flour
    1 tsp Soda
    1 tbsp Oil
    Oil For Shallow Fry
    For Gravy
    2 tbsp Ghee
    ½ tsp Cumin Seeds
    5-6 Garlic, Chopped
    1 inch Ginger, Chopped
    2 Green Chilli, Chopped
    2 Medium Onion, Sliced
    ½ tsp Asafetida
    1 tsp Coriander Powder
    1 tsp Turmeric Powder
    1 tsp Red Chilli Powder
    1 Tomato, Chopped
    ⅓ cup Curd
    ½ tsp Red Chilli Powder
    1 tsp Coriander Powder
    Salt To Taste
    ½ tsp Sugar
    1 tbsp Coriander leaves
    Process
    Making Lauki Kofta
    ● Peel the lauki/ bottle gourd. Grate it.
    ● Squeeze the grated lauki and collect the juice in a bowl or mug. Keep the juice aside for later use.
    ● Mix all the ingredients for making the koftas with the grated lauki except oil.
    ● Make small round shaped balls or patties.
    ● Heat oil in a frying pan. Shallow Fry the lauki kofta in the oil, till they are golden brown on all sides.
    ● Drain the fried kofta on kitchen towel so that the extra oil is absorbed.
    For the Gravy
    ● In a kadai, heat ghee add cumin seeds and let it splutter.
    ● Add garlic, ginger, green chilli and saute well.
    ● Add onion and saute till translucent. Add asafetida, coriander powder, turmeric powder, red chilli powder mix well.
    ● Add tomato and cook till it gets soft and start leaving oil from the edges.
    ● In a bowl, add curd, red chilli powder, coriander powder mix well.
    ● Transfer this mixture into the kadai and mix well.
    ● Add the lauki juice, sugar and about 1 cup of water.
    ● Stir and simmer for 10-12 minutes on low flame. Lastly, add the koftas.
    ● Switch off the flame, cover and let them be in the curry for a few minutes so that koftas will absorb all the flavors from the curry.
    ● Garnish with coriander leaves and serve lauki kofta hot with rotis, naan or jeera rice.

    I was really surprised to know that there is no use of potato/paneer/khoya etc. in the kofta for binding. It's a must try recipe for me.

      @@kaypandey7221 Agreed but that too not as much as lauki ke pakore.... moreover while I make the lauki ke kofte or kachhe Kele ke kofte, I usually use potato for binding.

      Yes,little Besan is enough as a Binder one can keep it roasted in advance n add in it.The recipe of shallow frying is as good as making pakora where by Besan helps it bind as potato or paneer would not have holded it together along with keeping koftas Mulayam within.Hence Besan does both the work of binding as well as maintaining softness within n most important retaining the Lauki taste!:-)

      I have made this recipe my style with roasted Besan as binder before seeing RB recipe maybe 2urs back and don't like potato in Lauki kofta hence don't add,kofte ka maja hee chalaa jayega!

    Poorly made video . No explanation regarding how much of soda to be put and how to wait before frying the kofta balls . Plus , adding sugar to the gravy was a total turnoff .

    Its a story, i loved cooking when I saw your videos and it’s almost 10 years of marriage but wasn’t not much into it as I didn’t had passion for this : but later as the years passed I got depressed and was pushed in kitchen and when I tried to over come my long depression I took your videos to create the new things and one of my fav hara Bhara kebab ; everyone now is like I am the good food destination to them .     Lauki Kofta recipe is really tasty. My husband does not like Lauki ki sabji but he loved this Kofta dish so much when I made it the first time that he keeps asking me to make it over and over again. The way Ranveer's expressions throughout the video is so awesome and his comments about his Biji's tricks makes the recipes look more authentic! He is just so natural.     I just made it for lunch. Didn’t have any tomatoes. So i skipped that. But it’s so yummy! My husband doesn’t want to eat zucchini. So made this recipe with zuccini. Now finger crossed. If he likes it, I will come back and update my comment haha 😹

    Looks very delicious and healthy. I will definitely try. I think I can make the koftas in oven too or airfryer to avoid too much oil.

    It’s so lovely to know simple things as to where Lauki actually originally came from! It’s so interesting to learn where foods originated!Thank you Ranveer Brar! And this recipe reminded me of my mother’s cooking. She made Lauki Kofta exactly like this. Thank you for bringing my mother back to me.

    Ranveer ji aise hi log apko best chef nhi Kahte , This lauki kofta was out of the world.Everyone asked for the recipe ,I proudly told that you're the same person we recently saw on The Kapil Sharma Show.I live in America and whenever I see people like you I feel more proud on Our India.The way you give tips in every recipe is amazing.When I added soaked chana dal in kofta , it enhanced the flavor.My mom thought it's Cashews inside 😀.My husband Really enjoys the session where you shares history related to the dish.Keep spreading love and keep making such amazing ghar ka Khana videos. ❤️
