- Matar ki kachori is a popular Indian snacks filled with special green peas mixture and deep fried to crispy perfection. It's the perfect snack for tea time or any gathering with friends and family
Ingredients.....
For dough..
500 gms all purpose flour/maida
Salt to taste
4 tbsp oil
Water
For filling.....
300 gm green peas
6-7 green chilli
1 inch ginger
handful of fresh coriander
2 tbsp oil
1 tsp jeera
1 tsp hing
1 tsp fennel seeds
1/2 tsp haldi powder
2 tsp coriander powder
1 tsp red chilli powder
1 tsp jeera powder
1 tsp garam masala
1 tsp dry mango powder
Salt to taste
Oil for frying
Method....
Add maida , salt and oil in a paraat and mix all the ingredients well initially, then rub the flour in between your palm to apply shortening,to check the flour take some of it in your hand and form a fist, if the flour holds its shape then you can add water to knead the dough. Knead semi soft dough and keep it covered for one hour atleast.
Coarsely grind green chilli, ginger and green coriander.
In the same jar grind green peas do not make fine paste grind it also coarsely.
Set a kadhai on high flame and add oil. Once the oil get hot and hing, jeera seeds and fennel seeds and saute. Add ginger paste and cook it , add grinded peas, haldi powder,red chilly powder, coriander powder, garam masala, jeera powder and dry mango powder, mix it add salt to taste and cook it for 5-6 minutes. Taste the filling and adjust the seasoning accordingly then transfer it into a bowl and cool it down completely. Your filling is ready.
To shape the kachori take a portion from the dough and flatten the dough ball using your fingers to make a cup like shape, place a large spoonful of filling in the centre than press the filling downward and bring the edges of the dough together to seal it pinch and remove the excess dough after sealing the dough ball , flatten out the dough ball into a large thick disc by applying pressure with your palms. Your shaped kachori is ready. To fry the kachori heat oil in a kadhai than drop the kachori in the oil and fry until crisp and golden brown. Your hot and crispy matar ki Kachori s are ready. Serve them with sweet tamarind and green chutney or with aalu ki sabji 😊
