    "Chicken" Roasted Tempeh
    2 packages of tempeh
    1 tsp poultry seasoning
    1 tsp garlic powder
    1 tsp paprika
    1 tsp salt
    1/2 tsp black pepper
    1 tbsp dried rosemary
    3 tbsp olive oil
    Pre-heat the oven to 400 degrees. Then cut the tempeh in half (4 pieces total) and place in a shallow pan with a lid. Add a half cup of water, cover and simmer for 10 minutes.
    Drain the water and pat dry. Place the tempeh on a lined cookie sheet.
    Then mix the spices and the olive oil in a bowl and mix well. Evenly distribute the marinate onto the tempeh and rub into both sides.Roast for 20 minutes. Then slice and serve!
    Vegan Rice Pilaf
    2 tbsp olive oil
    1/2 cup chopped onion
    3 cloves garlic
    1 cup orzo
    1/2 tsp poultry season
    1/4 tsp salt
    1/4 tsp black pepper
    1.5 cup rice
    1 tsp lemon zest
    2 cups vegan chicken broth
    2 cups water
    1 tbsp nutritional yeast
    1 handful chopped parsley
    1 handful toasted pine nuts or sliced almonds (optional but delicious!)
    Sauté onions for 5 minutes. Add the orzo and cook for 3 minutes. Add the minced garlic, spices, and lemon zest and cook for 1 minute.
    Rinse the rice and add it with the broth, water, and nooch. Bring to a boil, then reduce to low. Cover and simmer to 20 minutes.
    Fluff with a fork, add parsley and pine nuts and let sit without the lid for 10 minutes.
    Garlic Roasted Cabbage
    1 head cabbage, roughly chopped
    2 tbsp olive oil
    1 tsp garlic powder
    1/2 tsp salt
    1/2 tsp black pepper
    Roast at 400 degrees for 25-35 mins, then add more salt and pepper if needed!
    Spicy Pumpkin Hummus
    2 cans of chickpeas, rinsed and drained
    1/2 cup plain pumpkin purée
    1 tsp sea salt
    2 tsp ground cumin
    1 tbsp olive oil
    2 tbsp tahini
    2 tbsp Sriracha
    1/2 cup water
    Add all of the ingredients to a blender and blend until very smooth and creamy. Refrigerate until ready to serve to thicken. Note: it’s even better the next day when the flavors have time to hang out together :)
