I believe another reason is better controllability when using the rudder on landing, the F-14 specifically needed to be very good at controlling its pitch and yaw when trying to land such a large and heavy aircraft on a moving aircraft carrier, so it was included in later prototypes during the Navy's interceptor program and eventually ended up on the final design.

some, such as the f 18 and su 27, take advantage of their vortex generating capabilities and put the rudder in the wake so as to increase the controllability of the aircraft at higher aoa
The A-5 Vigilante, A-6 Intruder, F-111 Aardvark, Su-24, Tu-22(M), Me-262, Eurofighter Typhoon (just some examples) These all are twin engine military aircraft, but have a single vertical stabilizer. There's also the F-35 that has two vertical stabilizers, but a single engine.
