We enjoyed each of them very much and appreciated the variety of choices for a small ship. Full disclosure - we really don't eat at the buffet unless we need something in a hurry, which is usually breakfast or a snack. The buffet was very busy during peak times.

I used to live in the internet cafe above one of the atriums, sad they removed it but I completely understand because it was very well hidden and borderline abandoned, Being a kid at the time it was an excellent place to hide out and most people either never noticed it or had no idea how to get to it, I just happened by it on day one.
I would recommend the following: 1. Review the information on NCL's webpage at this link: www.ncl.com/about/accessible-cruising#dietary. There is a simple online form to notify them of the dietary needs or you can contact them at this email - accessdesk@ncl.com or phone number - 866.584.9756. They recommend at 45-days in advance of sailing. 2. The Main Dining Room staff and Specialty Dining staff are trained to handle these special needs. Always remind them (they will almost certainly ask every time). And ask if there is a GF substitute in case there's something "not advertised" 😉. And verify it with the server when the food arrives at your table. If you want to plan ahead for the next day, they can sometimes make a special GF version of a special dish. 3. Depending upon the severity, and your doctor's instructions, I would be very careful in the buffet. Hope you have a wonderful cruise on the Spirit. It is a fantastic "small" ship.
For 7-day cruise, 1st 2 guests on reservation get 1 specialty dining meal each for interior and ocean view or 2 specialty dining meals each for balcony and above. See www.ncl.com/about/terms-and-conditions/promotions. # of meals is different for 12+ day cruises.
Good question. I can not confirm it one way or the other. What I can say is that we had uncharacteristically warm and sunny weather for Alaska and we saw 1 kid in the pool 1 time in seven days. The hot tubs were quite popular, but no one ever used the pools.

Did you notice how they dealt with gluten free diners? About to travel on the spirit and my husband is celiac
