Mary Ellen, a big thank you for choosing this recipe. I didn't know this was on the ball website either or could be canned using safety methods. I had a lot of luck growing eggplant in my garden last year for the first time. I have been having much luck with peppers also and have ordered Ajvar pepper seeds from an heirloom seed company to grow this year - with eggplant and pepper in mind as one of the first uses. I agree that there are not enough international type recipes on the websites or canning books. And that is somewhat odd, because so many countries preserve their food by canning, as they are poorer countries and don't use freezers for abundant storage of food, reserving that for meats mostly. Thank you for showing us this and for being a part of the collaboration.
This sure brings back memories! I remember making this many, many years ago with my grandmother. She planted special ajvar peppers every year in her garden. Thanks for the memory!

We made ajvar when I was in culinary school, this is the recipe we used Sweet bell peppers Eggplant Garlic Olive oil Lemon juice Salt and pepper Vinegar Dried chili flakes. We roasted the veggies and gave everything a blitz the same as you, it was delicious.

A fun way to disguise veggies as a spread ! I love peppers and eggplant. I don't think I have seen either one roasted and pealed this way before, and you make it look so easy. Thank you for making and sharing this unique taste for us to try.
I LOVE this stuff! My late husband was from Serbia, so the first I tasted was at the family table homemade by my mother-in-law. This is so good on smoked sausage (theirs is divine) or with any roasted porked. I like mine mild but I'm sure a little heat makes the flavor zing. I've grown ajvarski peppers three years to make this but haven't gotten to. This is the year! I plan on roasting my peppers on an open grill as they do there. The Balkan food is totally amazing so I really appreciate you sharing this recipe AND for pronouncing it correctly! Awesome video! Thanks Prepper Potpourri!

Hi Mary Ellen, when you said caviar, I thought you were going to talk about fish eggs, not something I would like, but I have never had eggplant before. This is something I will have to try.
