I don't descale trout. You can eat the skin just like salmon and the scales are so small they are unnoticeable. I have learned that I am not a fan of eating the skin of Lahontan Cutthroat, golden trout, and Mackinaw(Lake trout). The skin on those is a little too fishy for me. Rainbows are my go to for eating. Brookies are great too. Browns do the job at dinner time.
Hand held grill is gold if you are cooking on a fire backpacking. A little heavy but worth the weight. Works great in all situations. Once you get one, you'll never go back!
Everyone tells me so! I'm just not that good of a cook! I only have a few ways I make fish. This one, my sweet lemon pepper trout clip is another, and baking trout is the third. The only thing that changes is the seasoning! For all of these clips, I caught the fish right before I cooked it. I just didn't show the cleaning or fileting process. I'm a dude who can eat the same thing every day so a wide variety of cooking options simply isn't something I ever developed. Your advice is solid, I just don't have the cooking skills!
When I cook a whole trout I put salt pepper little bit of garlic salt three slabs of butter and lemon juice wrap it up good in tin foil and throw on the coals for about 5 minutes on each side bigger fish take longer
