- Crazy Dave does his version of the shotgun shells and a different version he called the reloads.
Smoked at 225 for 2 hrs total.
After 1 hr check them every 30 minutes as you want the noodle to be Al Dente not too soggy.
For the reloads we dipped in marina sauce and it goes very well.

I just made a batch of 28. With hamburger sausage cheese fine chopped onions fine chopped sweet peppers and green peppers. Stuffed them wrapped them. Add ed some pappys seasoning. In the fridge til morning then in the smoker they go waiting to add some sweet sauce. Peppers are a added special for a lot of us on the west coast

Man, they look great. I just bought a new Pit Boss 1150 smoker/grill and it is famous. No more flare-ups.
My to go to temp is always 225F

I just made Shotgun Shells, and they are out on the Traeger now. I just HAD to stop back here and let you know - the LEM jerky gun idea was absolutely BRILLIANT... Thank you for that. I deviated from your filling a wee bit... and also added regular cream cheese into the mix along with some rub and the shredded tex mex cheese etc... but stuffing these gentle shells was an absolute dream! Again - thank you!

I've made shotgun shells a few times now. I've watched several videos and never seen anyone use a jerky gun to stuff them. I never even heard of one but what a game changer it will be. I cant wait to get one. Also, such a no-brainer to use the empty manicotti trays to hold/transport the wrapped shells. I'm smacking myself for not thinking of it. Thanks for the great tips.
Welcome. You’ll love a jerky gun. They are amazing.
You can also take meatloaf and load in the gun, use sausage casings and make nice treats.
The jerky gun is an awesome idea! Definitely going to try this.
I have an electric cookie dough gun that has a nozzle attachment. The downside is the small size of the barrel means replacing the mixture frquently. I think a pastry bag would also work well and be easier to fill.
Finally someone is using a jerky gun to stuff the noodles. I have seen other You Tube videos where people tried to do that by hand and it turned out as a mess.

Very nice recipes Dave and you beat me to trying some cream cheese. My Campchef Woodwind Pro is arriving tomorrow and that will be the first recipe to start with. I am lucky our weather here in Buffalo NY will be up to 40 degrees this week. Oh yes and I could not turn the captions off either.
No BBQ seasoning in the mix? I like the jerky gun method, since stuffing them by hand takes a lot of time/effort. Thanks, Dave!

Maybe on the reloads wrap bacon over the ends to help keep the insides in.
After you have the manicotti noodles stuffed Add wrapped with bacon Put them in the refrigerator overnight That will help them to soften the noodles

Great video. Have you ever tried mixing the sausage with ground beef? Just curious as to how it turned out.
I fill the Manicotti with A mix of chorizo And ground beef and cream cheese , and you can always use a cake Decorater tube !! Great video !!
I mixed different sausages. But different meats sound yummy.
How is the texture of the manicotti after cooking it this way?
Chewy mostly, the ends are an little crispy
If you don’t have a Jerky gun, you may have a sausage stuffer? I think it might work just as well
Good man ;! Dave I have been waiting for some one to use the jerky gun, i to use the gun . But I boil the shells for a bout 6 - 7 min, then i put two slices of cream cheese, one on each end. I have the long barrel for my gun , so it goes all the way through. Then I start to pump them up like a balloon! When the shells are soft you can put way more meat inside! So good thanks again!

What's with the Traegar, premium Bacon, decent meats, even uses a filler gun, and shiny new sheet pan but chooses generic cheap cheese? 🤔

Looks good. Couple of suggestions: 1) script your videos the production is bad and you won’t gain subscribers with videos like that; 2) seal the ends with the bacon so you don’t lose your stuffing.
