My mom grows these every year. I love them roasted in wedges too. A sweet variety is in a dessert soup. It is a soup base of coconut milk with mang beans, tapioca, and the kabocha squash. It tastes amazing hot or cold.

I've just split my squash in half and dug out the seeds. I am going to bake it for 30 minutes in a 400* oven (thanks for the info) then I am going to put the whole thing in my VitaMix and make soup. I think I will season with curry, garlic, salt, pepper, turmeric and maybe a bit of cinnamon and fresh nut meg.

I am amazed how you really don't need sugar with it or very little. I have put it in muffins and man oh man is it good. Pancakes...super and alone with sliced bananas for breakfast taste great and filling.

My first thought was to cube it up really small and put it in sushi. It would be great in a spicy tuna roll format. It would also be good in a squash soup with a blend of other squashes.
I could see kabocha mixed with maybe butternut, acorn, delicata, spaghetti, and even Humboldt squashes. Throw in some buffalo and rice and maybe the roasted seeds of all of the squashes. Man, I am an ideas machine.

These remind me of Dominican pumpkins(Auyama). They have the same dark green outside and insides but the sizes vary. One of my favorite things to make with this is a mash, where you steam/boil them, then add a bit of butter and milk.(similar to mash potatoes) You could eat this alone but one my favorite things to do is add some lightly fried onions (that have been cooked with a like TB of vinegar& a pinch of salt). It totally balances the sweetness of the mash with the saltiness the onions. It's a great side dish.

That Kabocha Pumpkin very much reminds me of and seem very much similar to the Caribbean Pumpkin called "Calabaza" which is also a sweet Pumpkin with rich flavor and don't taste anything like North American squash or pumpkin. It looks so similar and from the open cut and seeds almost seem like same Pumpkin. You can use it like a Potato, it's sweet so make Mash Pumpkin like a potato, soups, use in soups or in Rice for pumpkin flavored rice with heavenly orange color. You can even make Pumpkin Pancakes or Pumpkin Fritters like in the Caribbean. A natural sweet Pumpkin with rich flavor gives allot of uses.
