VLOGMAS DAY 24: HOW TO PREPARE GHANAIAN OKRO STEW (HEALTHY PALM OIL)

- Ingredients
Red Palm fruit and rapeseed oil, 2 large white onions (diced),2 scotch bonnet peppers,
1 tsp of grated garlic, 1 tsp grated ginger, 1/2 tin of chopped tomatoes, okro,courgette
, bicarbonate of soda
Mutton, Cod salted fish, smoked mackarel fillet, smoked basa fillet, smoked tuna fish,
wele (cowhide), king prawns, crab
marinading the meat: 4 medium size onions,1 tbs of fennel, 1/4 tsp of cloves, 4 cloves
of garlic, 1 scotch bonnet chilli, ginger, 250ml of water, salt to taste

Does anyone know where the smoked fish (mackeral and bass) in America?
You can check your african market, best yet market if you have one in your state or you can check spanish supermarket hopes this help.
Or you can check the grocery stores, the Asian ones especially, and buy fresh mackerel/basa from there to bake in the oven. It may not have the "smoked" flavor but it will be close enough.

The difference is that the bicarbonate of soda is powdery and you can incorporate it into your baking.😘
