I cook for someone who has a sensitivity to most alliums. I have found I have been able to replicate a similar taste texture to onion with a combination of cumin and celery seed.

I have allium allergy and I struggle with this things. Can you explain how many cumin and celery seed add for cooking? I mean the ratio, so it gonna be similar with onion.
And the last, what do you mean celery seed? Is it celery dry/flakes or it's actually seed that we usually plant it?
Please answer me. Thank you so much!

If you want to substitute hing you can do this by, 1 table spoon of olive oil, grate celery saute it and add fennel powder. If you want to use hing, great way to enhance flavour is, Oil, Mustard Seeds, peanuts, pinch of hing, turmeric and curry leaves. =)

Jains and Brahmin cuisine is the go to for a strict vegetarian cuisine which while avoiding garli and onion, still is in more flavourful than most cuisines. Do give it a try. If u want to be a vegetarian Indian is the way to go. I know of many meat eaters from EstAsia and Europe who never turned back after adopting Indian vegetarian cuisine. They originally thought it was impossible to remain vegetarian through out one’s life as that would mean missing out on the flavourful cuisine that meat eating offers. Since then they have found that proper vegetarian cooking far outstrips any meat based cuisine in taste and flavour. U just need to know how to cook and u would find far more delicious flavour is possible through vegetarian cuisines than through the meat base ones.

      It's about why you eat,
Eating for youself or eating to do something for other,
That way it doesn't really matter what to eat if you are able to serve the world (you are serving Krishna as well),
Eating or not eating Tamasic or satvik is the decision to make for your Mental well being...

The problem is that anything that smells and tastes like onion is problematic for people who suffer from a distorted sense of smell from covid. For example, I can't eat chives (ciboulette) either, because it still tastes like onion, and I haven't tried hing/asafoetida, but I imagine I won't be able to tolerate that either if it tastes like onions :(@@hellofellowhumanbeings

I am confused. I like onions, mainly raw in my salad or less often in cooking. Not much garlic though, except occasionally, because especially when eaten raw it gives you a very bad breath which lasts for many hours. However, most videos and articles found in the internet, say that both of them are very beneficial to one's health and often recommend their daily consumption, mostly raw and in rather hefty quantities too. Now here is a video according to which they have "detrimental effects on your health" when consumed everyday. What should i believe ?
