  • Trader Joe's has finally released some NEW items after weeks off. My pantry was getting rather bare so I loaded up on fresh produce items, whole foods, fruits, vegetables, beer, all the new items and everything else I needed to feed my family for the week.

Katie, a warning. You said you were going put that mint in your garden. That is a very invasive and prolific plant. To say it grows like a weed is an understatement. It will grow so fast and take over your whole garden I’d like to suggest you keep it in a pot or a planter and you will absolutely have more mint than you could ever use. Best! ❤

I haven’t paid attention to the comments but your videos lately seem like you are spending a lot of time justifying what you are doing/buying to your audience, which you totally don’t need to do lol. My humble suggestion is don’t worry about it and don’t feel any need to explain away guilty pleasures (which we all have!)😜 on the flip side it’s awesome you are also emphasizing your healthier choices and it’s always nice to hear tips and ideas on how to incorporate healthier ingredients(especially any way that is simple/fast). My issue is I’m terrible at cooking at home/cooking from scratch and I end up getting so much premade stuff, that gets terrible for you after awhile

    • @KatieHespe

I think this is the first time in a long time I’ve addressed negative comments. I do feel like I’ve created a community here so when I was sick and MIA for a little while I wanted to let everyone know what was going on. I do appreciate the sentiment and where you’re coming from but I’m totally comfortable talking about my lifestyle and how I approach certain things here on my channel. Enjoy your weekend!

The reason jams and jellies have sugar as a main ingredient is because the sugar is what helps the pectin to set up. It is the main star in preserving your preserves. :) I always view jams as a sweet addition and don’t fret too much about the sugar because most kids don’t eat an over abundance of jelly. You’re doing a great job making healthy swaps! And it sounds like you’ve got some great recipes that you’ve been making. I need to hop over to your IG stories and get some more inspiration. Thought I'd drop a comment on how to pronounce "jumeokbap"! You'd break it down as "ju-meok-bap". "Ju" is pronounced like you would pronounce the "Ju" in "June". "Meok" is pronounced like "muck". "Bap" is pronounced similar to how you'd pronounce the "bab" in "babka" except ending in a silent p. Hope that makes sense. FYI, "Ju-meok" means "fist" and "bap" means "rice". I'm not sure if the "fist" part is referring to the size of the rice ball or if it's more about shaping it by making a fist though.

Ok here it is Vegetarian Mulligatwany Soup. 3 tablespoons olive oil, four garlic cloves minced, one large onion diced, 2 sticks of celery diced, 4 carrots, peeled and sliced, 1 pound of dried red lentils, 16 ounces canned whole tomatoes cut into pieces, 1 can chickpeas, rinsed and drained, 8 cups of vegetable stock, 2 cups of tomato juice, 3 teaspoons curry powder, 3 teaspoons ground cumin, 2 teaspoons ground coriander, a half a teaspoon of cayenne pepper or more to taste, 1 can of coconut milk, 2 tablespoons of honey, one and a half cups of cooked basmati rice and chopped cilantro for garnish. In a stock pot add the oil, garlic, onion, celery, and carrots, and sauté till everything starts to get soft, add everything else except the coconut milk, honey, rice, cilantro, salt and pepper. Bring to a boil, reduce the heat, cover and simmer for 40 to 45 minutes. Stir in the coconut milk, the honey, the rice and season to taste, heat till everything is to the temp you like it.
