- Traditional Turkish Cookies (Beypazarı Kurusu) & Sourdough Discard Cookies
Ingredients;
220 g milk (200 g milk is enough if you are using white flour)
300 g sourdough discard (must be fed at least three days ago)
20 g sugar
100 g olive oil
700 g flour mixture (100 g whole wheat, 100 g rye, 100 g durum wheat and 400 g bread flour)
15 g grape vinegar
16 g salt
One teaspoon of turmeric, mahaleb
Cinnamon (as desired)
One tablespoon each of sesame and black cumin
200 g butter
Knead the dough, let it rest for 2 hours, shape it and bake it.
Bake it with a fan at 200 degrees for 30 minutes and reduce the temperature by 10 degrees every 10 minutes and complete the baking in 70 minutes. Upside down it last 15 minutes of baking. If it is not crunchy, let's bake it a little more.
