Everything you mentioned, but also that all of his attacks, combos, and design choices in general feel extremely balanced and deliberate, while not sacrificing difficulty in the process. The back and forth, the punishes, the effective but not ridiculous attack delays, the AGGRESSION in phase 2, etcetera - there are bosses from DS3 alone that beat him in pure spectacle, like maybe Midir and Gael, but from an actual boss fight design perspective, that boss is honestly a masterpiece of coding and should genuinely be studied when designing humanoid bosses.
