Roomali Roti as we see in open restaurants or dhabas, seems to like a difficult task but honestly it is not.
It goes well with butter chicken, makhni dal, paneer butter masala and almost any gravy preparation.
Also, if you are avoiding maida, here is a great option to make it with wheat flour.
Let's learn how to make translucent, super soft roomali Roti that melts in your mouth.
Recipe
Make a soft dough of wheat flour with salt and then water like you do for regular chapattis
Then add oil to make it even soft and kneed more.
Make small balls of equal size, flatten them and dust in wheat flour and then oil and repeat the process.
Then stick both flat balls together
And press them together
Roll them like regular chapattis and make a big one. Roll it as thin as possible and dust it on regular basis.
Evenly roll towards the ends
Sprinkle some flour on the tawa and check
If it turns brown means it's ready.
Put the roti on tawa on both sides lightly because we also need to separate both the rotis at the end.
Once done take it out and separate both the parts. Add ghee or butter and fold it.
